Easy Red White and Blue Popsicles

How fun are these fruit kabobs?! Perfect for the 4th of July, or Memorial Day, or Labor Day. These red white and blue fruit kabobs can easily be enjoyed for any patriotic holiday โ€“ or just because.

With fresh fruit and a simple refreshing yogurt dip for dunking, these fruit kabobs are very easy to make and such a healthy treat, not to mention fun. Great for kids and adults, too.

Though they were originally made as a 4th of July snack, theyโ€™re great all summer long to enjoy at gatherings on hot days.

  • Make them long or mini โ€“ use lollipop sticks or standard wooden skewers, depending on how short or tall you want them.
  • Make them ahead โ€“ you can make these ahead of time and stick them in the fridge until ready to serve.
  • No special skills needed – anyone can make them. Have your kids help!

Ingredients Needed

These easy fruit kabobs are made with just 3 ingredients plus a simple yogurt dip. Perfect for an easy, healthy summer snack.

  • Berries โ€“ Youโ€™ll need fresh blueberries and strawberries to add the red and blue to these 4th of July kabobs.
  • Apple – Any type of apple can be used for adding to the white part of these patriotic fruit skewers.
  • Lemon Juice – To preserve the appleโ€™s white color and prevent browning, coat apple stars with lemon juice.
  • Yogurt Dipย โ€“ You can use regular or Greek yogurt. It’s mixed with vanilla, honey, and lemon juice for a simple, but delicious and refreshing condiment for dipping your fruit into. Or use this fruit dip that’s made with cream cheese and marshmallow cream!

Tools Youโ€™ll Need

There are a few things youโ€™ll need to make these homemade fruit skewers. Hereโ€™s what I used.

  • Star-shaped cookie cutters โ€“ I used these cookie cutters. There are 3 different sizes: 1.6-inch, 1.3-inch, and 1-inch. I only used the 1-inch cutter for this recipe but depending on the size of your strawberries and popsicles, you could use bigger ones too. Metal cutters work best for a clean cut.
  • 4-inch appetizer toothpicks โ€“ These make cute petite kabobs! But more importantly, they donโ€™t split the apples in half when pierced and are more proportional to the small pieces of fruit, unlike regular kabob skewers.

How to Make Fruit Kabobs

The hardest part of making these fruit kabobs is simply waiting for them to freeze.

  1. Clean the fruit. Wash, dry, and prepare fruit for cutting.
  2. Make the strawberry stars. Cut off the stems and slice each strawberry about 1 centimeter thick from the top down. Use a cookie cutter to cut a star shape from each slice. Repeat with all strawberries.
  3. Make the apple stars. Cut two halves around the core for each apple. Cut off the rounded peel side of each half to make it flat (it should be about a half inch thick) and use the 1.6-inch cookie cutter to punch out a star and set aside. With the remaining core piece, use the 1-inch cookie cutter to punch out stars on either side of the core. Repeat for all apples. (To preserve the appleโ€™s white color and prevent browning, coat apple stars with lemon juice.)
  4. Prepare the yogurt mixture. Combine the yogurt, honey, vanilla, and lime juice.
  5. Assemble the fruit kabobs. Assemble kabobs using 4-inch toothpicks, alternating between blueberries, strawberries, and apples. Serve with the fruit dip.

Ways to Use Leftover Fruit Scraps

Since weโ€™re cutting stars from the strawberries and apples, youโ€™ll have some leftover scraps. But donโ€™t throw them away! I love to repurpose the scraps from these 4th of July kabobs into other recipes. Here are a few ideas:

You can prepare the fruit kabobs up to 24 hours ahead of time. Just make sure to coat the apples with lemon (or lime) juice generously to preserve the white color and prevent browning. Store in the refrigerator until it is time to serve. Store the yogurt dip separately in an airtight container in the refrigerator for up to 3 days.

Equipment

  • 4-inch appetizer toothpicks
  • Small star shaped cookie cuttersย (these are theย cookie cuttersย I use)

Ingredients 

FOR THE KABOBS

  • 6 large strawberries
  • 2 Pink Lady apples, (or similar)
  • 1/2 cup blueberries
  • 1 tablespoon fresh lemon juice

FOR THE YOGURT DIP

  • 1/2 cup plain yogurt or plain Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon vanilla

Instructions 

  • Wash, dry, and prepare fruit for cutting.
  • To make stars out of strawberries: cut off the stem, then cut each strawberry in half (from the top down). Depending on the size of the strawberry, use a 1-inch or 1.3-inch cookie cutter to punch out a star shape. Gently remove the strawberry from the cookie cutter and set aside. Repeat for all strawberries.
  • To make stars out of apples: cut two halves around the core for each apple. Cut off the rounded peel side of each half to make it flat (it should be about a half inch thick) and use the 1.6-inch cookie cutter to punch out a star and set aside. With the remaining core piece, use the 1-inch cookie cutter to punch out stars on either side of the core. Repeat for all apples.

  • Assemble kabobs using 4-inch toothpicks, alternating between blueberries, strawberries, and apples.
  • Combine all the ingredients for the yogurt dip and serve promptly with the fruit kabobs.
