Easy Red White and Blue Popsicles
How fun are these 4th of July popsicles?! I always try to keep a few patriotic dessert ideas on hand, like red white and blue poke cake, so I can whip something up for any 4th of July (or Memorial Day or Labor Day) gatherings. And I’m in love with these red white and blue popsicles.
With fresh fruit, vanilla yogurt, a bit of maple syrup to sweeten them up and a splash of heavy cream for an extra creamy texture, these fruit popsicles are incredibly easy to make. Though they were originally made as a 4th of July dessert, they’re perfect all summer long to enjoy on hot days.

Ingredients Needed
These easy fruit yogurt popsicles are made with just 5 ingredients. Perfect for an easy, healthy summer treat.

- Berries – You’ll need fresh blueberries and strawberries to add the red and blue to these 4th of July popsicles.
- Yogurt – You can use regular or Greek yogurt. I used vanilla but plain and lemon yogurt also work.
- Heavy whipping cream – The cream can be replaced with any milk. I tested an almond-coconut milk blend, and it had a great flavor. But the heavy cream popsicles had a smoother texture and fewer shards of ice which was easier on the tongue.
- Maple syrup – The maple syrup can be replaced with honey, if preferred. I found that the honey added a subtle honey flavor, while the maple syrup seemed sweeter and did not add flavor. I preferred the maple syrup when also adding in an extract.
- Vanilla – Instead of vanilla extract, you can also use strawberry, citrus, or coconut extract OR 1 tablespoon of lemon or other citrus juice for flavor.
Tools You’ll Need
There are a few things you’ll need to make these homemade popsicle sticks, like popsicle molds. Here’s what I used.
- Small bowl or measuring cup with spout – This makes pouring the yogurt mixture into the popsicle mold much easier!
- Star-shaped cookie cutters – I used these cookie cutters. There are 3 different sizes: 1.6-inch, 1.3-inch, and 1-inch. I only used the 1-inch cutter for this recipe but depending on the size of your strawberries and popsicles, you could use bigger ones too. Metal cutters work best for a clean cut.
- Popsicle mold – I used this silicone mold. You can also use paper cups. It was easy to get the popsicles out of this mold and I like the shape of the popsicles.
- Popsicle sticks – Because you’ll need something to hold on to!
How to Make Fruit Yogurt Popsicles
The hardest part of making these fruit yogurt popsicles is simply waiting for them to freeze.

- Make the strawberry stars. Cut off the stems and slice each strawberry about 1 centimeter thick from the top down. Use a cookie cutter to cut a star shape from each slice. Repeat with all strawberries.
- Prepare the yogurt mixture. Combine the yogurt, heavy whipping cream, maple syrup, and vanilla extract.
- Assemble the fruit popsicles. Place the strawberry stars and blueberries in the popsicle molds, pushing the strawberries to the sides. Pour the yogurt mixture in halfway, add more berries, and repeat.
- Freeze. Place the lids on the molds and freeze for 45 to 60 minutes. Insert the popsicle sticks in the center of each popsicle, leaving a little space at the bottom. Freeze for 3 hours more, until completely firm and frozen.
- Remove from the molds. Once the yogurt popsicles are completely frozen, remove them from the molds and enjoy!
Fruit Popsicle Variations & Tips
Here are a few tips for making these red white and blue popsicles, as well as some variations.
- Easily remove the fruit popsicles from the molds. To help encourage the popsicles out of their mold, you can run warm water over the outside bottoms of the mold. If using a silicone mold, you can push on the bottom while pulling up on the popsicle stick to help get them out.
- Use any milk desired. Swap heavy whipping cream for a milk with a lower fat content, or almond milk or coconut milk.
- Try a different flavor. Vanilla extract can be swapped for strawberry, citrus, coconut, or any other flavor of extract. You can also add a tablespoon of fresh lemon or lime juice.
- Add more berries. Each popsicle has about 4-5 strawberry stars and 4-5 blueberries. But you are free to include a few more, if preferred.
Ways to Use Leftover Fruit Scraps
Since we’re cutting stars from the strawberries, you’ll have some leftover scraps. But don’t throw them away! I love to repurpose the scraps from these 4th of July popsicles into other recipes. Here are a few ideas:
- Freeze and add to smoothies, like my strawberries and cream smoothie
- Make jam or a strawberry sauce
- Use them in a strawberry cobbler dessert
- Make strawberry infused water
- Use them in strawberry margaritas
- Make strawberry lemonade
- Add to this spinach salad

How to Store Homemade Popsicles
You can keep your homemade popsicles in the mold for a few days, which is perfect if you’re enjoying them as a regular summer treat. If you won’t be eating them all in a few days, it’s better to remove them from the mold and transfer them to reusable plastic freezer bags or a freezer safe plastic container. You can freeze them in multiple layers, but be sure to put parchment paper between each layer. These popsicles will stay fresh for up to a month in the freezer.

Equipment

- Popsicle sticks
Ingredients
- 6 to 8 large strawberries (about 5 ounces)
- 1/2 cup blueberries (about 2.5 ounces)
- 1 cup vanilla yogurt or vanilla Greek yogurt (or plain yogurt or lemon yogurt)
- 1/2 cup heavy whipping cream
- 1/4 cup pure maple syrup or honey
- 1 teaspoon vanilla
Instructions
- To make strawberry stars: cut off the stems and slice each strawberry from the top down about 1 centimeter thick each. Use a 1-inch star cookie cutter to punch out a star shape from each slice and set aside. Repeat for all the strawberries.{WAYS TO USE UP LEFTOVER SCRAPS: Since we're cutting stars from the strawberries, you'll have some leftover scraps. But don't throw them away! - In a measuring cup with a spout, combine the yogurt, heavy whipping cream, maple syrup, and vanilla extract.
- Place strawberry stars and blueberries in the popsicle mold (TIP! Push strawberries to the side of the mold so they will be visible. If blueberries are large, place them on the sides and avoid placing them in the center of the popsicle so that the popsicle stick doesn’t push them down). Pour in the yogurt mixture halfway, then add more berries and repeat until full (I used a little less than 1/3 cup of yogurt mixture for each popsicle).
- Place the lids on the molds and transfer to the freezer for 45 to 60 minutes.
- Insert a popsicle stick in the center of each popsicle, leaving a little space from the bottom, then place back in the freezer for at least 3 hours until completely firm and frozen.
- If using a silicone mold, you can push on the bottom while pulling up on the popsicle stick to help get them out. If having difficulty, you can run warm (not hot) water over the outside bottoms of the mold just for 5 or so seconds to loosen from the edges.
