Low Carb Broiled Avocado
While most people think of avocado as the main ingredient in guacamole or as a cold topping for salads (I’m looking at you gorgeous Cobb salad), it can be delicious warm, too! We love it as an avocado cream sauce over pasta and also broiled with a few seasonings. Yep, broiled avocado. Why we love it:
- Great flavor – A little salty, tangy, and slightly spicy.
- Healthy – Avocado contains the good fat! And it’s low carb.
- Satisfying – One avocado is actually quite filling, making this a nice little breakfast or snack.

I wouldn’t like to see a sea of dead worms, hahaha. Sounds horrible. But I’d totally like to taste avocado in this form.
I have a TON of avocados on my counter, courtesy of a Costco trip earlier this week. YAY for a yummy new way to use them!
This summer while I was marathon training it was SO hot most of the time that a high of 85 actually did sound cool!

Ouch–I’m so glad the heat has left us up here in Chi-town. In fact, after today (high = 77) we’re supposed to drop into the 50s. =) This makes me quite happy.
And I’ve never tried to cook an avocado–but now I think I have to.
This looks fantastic! AND, not hot here. As a matter of fact we are supposed to drop into the 40’s a few days next week! I’m ready for boots and sweaters.
