Low Carb Broiled Avocado

While most people think of avocado as the main ingredient in guacamole or as a cold topping for salads (I’m looking at you gorgeous Cobb salad), it can be delicious warm, too! We love it as an avocado cream sauce over pasta and also broiled with a few seasonings. Yep, broiled avocado. Why we love it:

  • Great flavor – A little salty, tangy, and slightly spicy.
  • Healthy – Avocado contains the good fat! And it’s low carb.
  • Satisfying – One avocado is actually quite filling, making this a nice little breakfast or snack.

  • Ripe avocado
  • Parmesan cheese
  • Fresh lime juice
  • Cayenne pepper

How to Make Parmesan Broiled Avocado

  1. Slice the avocado. Slice the avocado in half and remove the seed. Using a sharp knife, cut a criss-cross pattern about 3/4 of the way through.
  2. Season the avocado. Sprinkle the avocado halves with the cayenne, then drizzle the lime juice. Top with the Parmesan.
  3. Broil. Preheat your oven for broil and place rack in the second slot down. Place avocado halves on a baking sheet and cook under the broiler for 4-5 minutes.

Serving Suggestions

You can enjoy the broiled avocado right out of the shell with a spoon or if you’re not needing it to be low carb, feel free to transfer it onto a bagel and sprinkle with parsley.

Ingredients 

  • 1 whole ripe avocado
  • pinch of cayenne to taste
  • juice from one lime
  • 2 tablespoons grated Parmesan cheese

Instructions 

  • Preheat your oven for broil and place rack in the second slot down.
  • Slice the avocado in half and remove the seed. Using a sharp knife, cut a criss-cross pattern about 3/4 of the way through.
  • Sprinkle the avocado halves with the cayenne, then drizzle the lime juice. Top with the Parmesan.
  • Place avocado halves on a baking sheet and cook under the broiler for 4-5 minutes.
  • Eat the flesh with a fork or if you don't need it to be low carb, feel free to transfer it onto a bagel and sprinkle with parsley.

    This summer while I was marathon training it was SO hot most of the time that a high of 85 actually did sound cool!

    Ouch–I’m so glad the heat has left us up here in Chi-town. In fact, after today (high = 77) we’re supposed to drop into the 50s. =) This makes me quite happy.
    And I’ve never tried to cook an avocado–but now I think I have to.
