Easy Honey-Sesame Chicken Salad Recipe

You made the Honey-Sesame Dressing, right? Same hereโ€”I canโ€™t get enough of it. Did you use it all up? It’s hard not to, I know. Because…YUM. If so, just whip up another batch. Because I know youโ€™re going to love it on this wonderful Honey-Sesame Chicken Salad.

Hereโ€™s what I do: I grill up some chicken, toss it with fresh fruit, crunchy nuts, and a generous drizzle of that amazing dressing. Itโ€™s the kind of lunch (or light dinner) I could eat on repeat.

Prep: 30 minutes
Total: 30 minutes

This simple Honey-Sesame Chicken Salad is light and refreshing, made with fresh summer fruits, grilled chicken, and a fantastic quick homemade dressing. It's perfect for lunch or a light dinner.

Ingredients

For the Dressing

  • 1/3 cup mayonnaise
  • ยผ cup honey
  • 1 tsp Dijon mustard
  • 2 tbsp unseasoned rice vinegar
  • ยฝ tsp sesame oil

For the Salad

  • 4 cups chopped grilled chicken, I love the flavors that grilled chicken lends to this salad, but you can definitely use rotisserie chicken or leftoverย baked chicken breast
  • 1 large apple, thinly sliced
  • 1 large peach, thinly sliced, just ripe, or use pineapple
  • 1 cup fresh blackberries, strawberries also work
  • ยฝ cup roasted chopped pecans, or your favorite nut

Instructions

  • In a small bowl, whisk all the dressing ingredients together until combined and smooth. Cover and refrigerate until ready to use.
  • In a large bowl, gently combine chicken and fruit.
  • Evenly distribute the chicken and fruit onto plates. Sprinkle with the pecans and and drizzle with dressing.
  • Serve and enjoy!

Notes

  • The amount of dressing is about 3 tablespoons per salad. If you like more than that, consider doubling the dressing ingredients.
  • I love Honeycrisp or Pink Lady apples, but just use your favorite.

How to Store

Once assembled, this grilled chicken salad should be served immediately. However, individual elements can be refrigerated.

The honey sesame dressing keeps well in a tightly fitted lid in the refrigerator for up to a week. Just give it a good stir before serving.

Keep the cooked chicken in an airtight container in the refrigerator for up to 2 days. I actually prefer preparing the chicken in advance since I like it cold on the salad.

What to Serve With Honey-Sesame Chicken Salad

This chicken salad eats like a meal, and tastes great with a few slices of the world’s easiest homemade sandwich bread or a slice of beer bread. If bread isn’t your thing, you can always make a side of air fryer baked sweet potatoes.
