This simple Honey-Sesame Chicken Salad is light and refreshing, made with fresh summer fruits, grilled chicken, and a fantastic quick homemade dressing. It's perfect for lunch or a light dinner.
4cupschopped grilled chickenI love the flavors that grilled chicken lends to this salad, but you can definitely use rotisserie chicken or leftover baked chicken breast
1largeapplethinly sliced
1largepeachthinly sliced, just ripe, or use pineapple
1cupfresh blackberriesstrawberries also work
½cuproasted chopped pecansor your favorite nut
Instructions
In a small bowl, whisk all the dressing ingredients together until combined and smooth. Cover and refrigerate until ready to use.
In a large bowl, gently combine chicken and fruit.
Evenly distribute the chicken and fruit onto plates. Sprinkle with the pecans and and drizzle with dressing.
Serve and enjoy!
Notes
The amount of dressing is about 3 tablespoons per salad. If you like more than that, consider doubling the dressing ingredients.
I love Honeycrisp or Pink Lady apples, but just use your favorite.
