This Cowboy Coleslaw is the side dish I want at every cookout, potluck, and summer party. Each spoonful is creamy and crunchy with bold Tex-Mex flavor, a smoky taco-lime dressing, black beans, corn, bell pepper, and chili cheese Fritos added at the end for the best salty-crunchy finish. Itโ€™s ready in about 20 minutes, just hold the Fritos until right before serving.

As soon as I saw the viral Fritos cowboy cabbage recipe making its rounds on social media, I knew I had to give it a go. I love a good creamy coleslaw, and this cowboy coleslaw has enough big texture and bold flavor to hold its own next to burgers, tacos, grilled chicken, or anything coming off the grill!

Cowboy coleslaw reminds me of Texas caviar in the sense that both lean into those cowboy-style flavors: beans, corn, peppers, a little heat, and plenty of color, but this coleslaw is creamier, crunchier, and finished with crispy corn chips. The pre-bagged cabbage makes it extra simple, and once everything is tossed together, itโ€™s more than a side. Itโ€™s practically the main event of the potluck table.

Helpful Tips and Variations

  • Use your favorite coleslaw mix. I use tri-color coleslaw because it has a great mix of texture and color from the green cabbage, red cabbage, and shredded carrots. Angel hair coleslaw, broccoli slaw, or 8 ounces of freshly shredded cabbage will also work.
  • Adjust the spice level. For a milder salad, leave out the jalapeรฑos and use just 1/2 to 1 tablespoon of minced chipotle peppers in adobo. Youโ€™ll still get some smoky flavor without as much heat. For a spicier version, add extra jalapeรฑos (keep the seeds for the spiciest slaw!) and chipotle peppers.
  • Add the chips right before serving. The Fritos are my favorite part of this cowboy coleslaw. Theyโ€™re best when theyโ€™re crunchy, so wait to fold them in until just before serving.
  • Try a different chip flavor. I think the chili cheese Fritos are the best choice here because they add salt, crunch, and extra Tex-Mex flavor. However, original Fritos are a great swap if you want the crunch without adding much more seasoning. I bet crushed Doritos or other sturdy corn chips would be delicious, too.
  • Make it a full meal. Iโ€™ll happily eat this cowboy cabbage recipe as is because itโ€™s plenty filling from the beans and cabbage, but leftover shredded chicken, chopped baked chicken breast, or rotisserie chicken turns it into an even heartier lunch or light dinner!

For the Salad

  • 8 oz. bag tri-color coleslaw
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 small red bell pepper, diced
  • ยพ cup diced scallions
  • 2-3 jalapeรฑos, diced
  • ยผ cup chopped cilantro
  • 3.5 oz. bag chili cheese Fritos corn chips

For the Dressing

  • ยฝ cup mayonnaise
  • ยฝ cup sour cream
  • 1-2 tbsp minced chipotle peppers in adobo sauce, or sriracha
  • 1ยผ tbsp taco seasoning
  • ยผ cup lime juice

Instructionsย 

  • In a large mixing bowl, add all the salad ingredients (except the Fritos.)
  • In a separate medium mixing bowl, add all the dressing ingredients and whisk until smooth and combined.
  • Pour dressing over the salad and toss to coat.
  • Add in the Frito corn chips and gently toss to coat again.
  • Enjoy immediately while the Fritos are still crunchy!

How to Make Cowboy Coleslaw Step by Step

Gather all of your ingredients.

Black beans, corn, coleslaw mix, diced red bell pepper, scallions, jalalpenos, and cilantro in a bowl.

Combine the salad ingredients: Add the 8 oz. bag of tri-color coleslaw to a large mixing bowl, then stir in 1 cup drained and rinsed black beans, 1 cup drained corn, 1 diced small red bell pepper, ยพ cup diced scallions, 2-3 diced jalapeรฑos, and ยผ cup chopped cilantro. Toss everything together until the veggies are evenly mixed, and the bowl looks colorful and well combined.

Make the dressing: In a separate medium bowl, whisk together ยฝ cup mayonnaise, ยฝ cup sour cream, 1-2 Tbsp minced chipotle peppers in adobo sauce, 1 heaping Tbsp taco seasoning, and ยผ cup lime juice. Keep whisking until the dressing is smooth, creamy, and speckled with seasoning. Taste and adjust with a little extra chipotle or sriracha if you want more heat.

  • Fridge. Transfer any leftover cowboy slaw to an airtight container and refrigerate for up to 3 days. Itโ€™s best stored without the Fritos, since theyโ€™ll soften as they sit.
