Avocado toast took the world by storm several years ago and its popularity has never waned. Most likely because it’s so easy, delicious, healthy, satisfying, and versatile. Five pretty great things, for sure.
My favorite way to make avocado toast isn’t with bread, though – it’s with a hash brown! Hash Brown Avocado Toast is the way to go, my friends.
The base for this avocado toast recipe is a crispy golden hash brown patty smothered with seasoned ripe mashed avocado, then finished with an egg, salsa, and some feta cheese. That’s my favorite way to make it, but the possibilities are practically endless. Variations are included below so you can easily keep your toast interesting every time!

- Hash Brown Patties – Precooked frozen hash brown patties. No need to defrost them first.
- Avocado – Our star ingredient. Choose a ripe avocado without blemishes or brown spots.
- Lemon Juice – Fresh lemon juice for best flavor. Skip the bottled stuff, you will taste the difference.
- Sriracha – For a nice little bit of heat and added flavor.
- Seasonings – Simple salt and pepper season the mashed avocado.
- Eggs – Top your toast with a fried egg, poached egg, or scrambled eggs.
- Salsa – Salsa and avocado love one another. Pico de Gallo is also delish.
- Cheese – We finish off our toast with a bit of crumbled feta cheese. Cotija is another good choice.
Recipe Variations
Crispy hash brown patties are the ultimate base for sweet and savory toppings, making this recipe very versatile. Here are some ways to change it up.
- Everything Bagel. We’re pretty obsessed with our everything bagel seasoning and love to sprinkle it on, well, everything! It would go great on this toast along with some smoked salmon.
- Mushroom-Spinach. Sauté some mushrooms, spinach, and garlic in a bit of butter. Season with salt and pepper and stir in some herbs, if desired.
- Tomato-Basil. Fresh ripe sliced tomatoes, balsamic glaze, and fresh torn basil leaves.

How to Make Hash Brown Avocado Toast
It couldn’t be easier to make this hash brown toast in just a couple simple steps.

- Mash the avocado. Lightly mash the avocado until it’s smooth, but still has texture. Mix in the lemon juice, sriracha, and some salt and pepper, to taste.
- Air fry the hash browns. Place frozen hash brown patties in your air fryer basket, in a single layer, leaving space in between each patty. Air fry at 400F for 12 minutes, flipping halfway.
- Cook the eggs. Make your eggs any way you want. We love a fried egg or scrambled eggs on top of our avocado toast.
- Assemble. Top each hash brown with some mashed avocado, a cooked egg, a turn or two of fresh cracked pepper, 2 tablespoons of salsa, and 1 tablespoon cheese. Serve immediately.
Preparation and Serving Suggestions
You can cook as many hash browns as you are able to fit in your air fryer basket, but I’d recommend no more than 4 at a time to not overcrowd the air fryer and make sure they crisp up properly. If making more than 4 toasts, air fry in batches, or you can certainly bake them in the oven!
Avocado toast should be served immediately, it’s not a make ahead meal or something that can sit for too long because the avocado will turn brown pretty quickly.

- 4 (2.25 ounces each) frozen hash brown patties
- 1 ripe avocado
- 2 teaspoons fresh lemon juice
- 1 teaspoon sriracha
- salt and pepper , to taste
- 4 large eggs (prepared fried, poached, or scrambled)
- 1/2 cup salsa
- 1/4 cup crumbled feta cheese (or cotija)
Instructions
- Lightly mash the avocado with a fork until it's smooth, but still has texture. Mix in the lemon juice, sriracha, and some salt and pepper. Taste and adjust seasoning, if desired.
- Place frozen hash brown patties in your air fryer basket, in a single layer, leaving space in between each patty. Air fry at 400F for 12 minutes, flipping halfway.
- While the hash browns cook, prepare the eggs how you like them. We love this toast with a fried egg, poached egg, or scrambled eggs.
- Remove the hash browns from the air fryer and top each with a quarter of the mashed avocado, a cooked egg, a turn or two of fresh cracked pepper, 2 tablespoons of salsa, and 1 tablespoon cheese.
