Ingredients
4(2.25 ounces each)frozen hash brown patties
1ripe avocado
2teaspoonsfresh lemon juice
1teaspoonsriracha
salt and pepper , to taste
4largeeggs (prepared fried, poached, or scrambled)
1/2cupsalsa
1/4cupcrumbled feta cheese (or cotija)
Instructions
Lightly mash the avocado with a fork until it's smooth, but still has texture. Mix in the lemon juice, sriracha, and some salt and pepper. Taste and adjust seasoning, if desired.
Place frozen hash brown patties in your air fryer basket, in a single layer, leaving space in between each patty. Air fry at 400F for 12 minutes, flipping halfway.
While the hash browns cook, prepare the eggs how you like them. We love this toast with a fried egg, poached egg, or scrambled eggs.
Remove the hash browns from the air fryer and top each with a quarter of the mashed avocado, a cooked egg, a turn or two of fresh cracked pepper, 2 tablespoons of salsa, and 1 tablespoon cheese.
