- Balsamic vinegar – The unique sweet but acidic flavor of balsamic pairs well with the strawberries. Be sure to use a quality brand.
- Honey – Sweetens the strawberries and balances out the tart balsamic. It also helps create a sticky caramelized sauce as the strawberries release their juices.
How To Make Roasted Balsamic Strawberries
These roasted strawberries take just a few minutes to prepare.

- Prep. Preheat the oven to 350 degrees and line the baking sheet with parchment paper. Spread the halved strawberries over the parchment paper.
- Drizzle. Whisk together the balsamic and honey. Drizzle it over the strawberries and toss to coat, then spread back into a single layer.
- Roast. Bake the strawberries in the oven for about 25 minutes. They should soften and release their juices.

Tips & Variations
- Don’t over-roast. These balsamic strawberries get softer the longer that they roast – if you bake them too long, you could end up with a mushy mess. (It’ll still taste great, though!)
- Use off-season strawberries. One of the reasons I love this recipe so much is that it’s great for when you grab out-of-season strawberries at the store. Roasting them helps to brighten the flavors and turns “meh” strawberries into ones you’ll want to put on EVERYTHING.
- Adjust the sweetness. For sweeter roasted strawberries, add a bit more honey. If you have fresh, in-season strawberries, you might want to use a tad bit less honey.
