Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Spread strawberries over the parchment.
In a small bowl, whisk together the balsamic vinegar and honey; drizzle over the strawberries and toss to coat, then make sure they’re in a single layer.
Transfer strawberries to the oven and roast for about 25 minutes until they start to soften and release their juices. Let cool completely.
