- Vanilla yogurt – You can use regular vanilla yogurt or Greek vanilla yogurt.
- Pistachio pudding – Just the powder, do not prepare the pudding according to the box.
- Sweetened coconut flakes – Lightly toast in the oven for extra flavor.

- Combine the ingredients. Beat the cream cheese until smooth, then blend in the pineapple, yogurt, pudding powder, 1/2 cup coconut flakes, and vanilla until combined.
- Chill. Cover and refrigerate for at least an hour, then soften for a few minutes at room temperature.

- Don’t skip the chill time. It might seem a bit silly to chill the dip and then soften it to room temperature but trust me. This chill time also doubles as time for the flavors to meld and it’s so worth it.
- How to easily soften cream cheese. The best way to soften cream cheese is to leave it on the counter for 30 minutes or so. If you forget, you can pop it in the microwave in 20-second intervals instead, but make sure it doesn’t melt!
- How to toast coconut. If you want to toast your own coconut, just spread it on a baking sheet and pop it in the oven at 350F for 10 minutes or so. Keep an eye on it and stir it a few times, until it turns your desired color of toasted.

- 20 ounce can crushed pineapple , mostly drained
- 6 ounce container vanilla yogurt
- 3 ounce box pistachio pudding (just the powder)
- 3/4 cup sweetened coconut flakes , lightly toasted, divided
- 1 teaspoon vanilla
- fresh strawberries and Nilla wafer cookies , for dipping
- crushed roasted pistachios , for garnish, optional
Instructions
- In a medium bowl, with a handheld mixer beat the cream cheese until smooth. Then blend in the pineapple, yogurt, pistachio pudding powder, 1/2 cup coconut flakes, and vanilla until well combined.
- Cover and chill in the refrigerator for at least one hour, then let soften a bit at room temperature.
- Garnish with the remaining 1/4 cup toasted coconut flakes and crushed pistachios, if desired, and serve with fresh strawberries and Nilla wafer cookies.
