Avocado toast took the world by storm several years ago and its popularity has never waned. Most likely because it’s so easy, delicious, healthy, satisfying, and versatile. Five pretty great things, for sure.
My favorite way to make avocado toast isn’t with bread, though – it’s with a hash brown! Hash Brown Avocado Toast is the way to go, my friends.
The base for this avocado toast recipe is a crispy golden hash brown patty smothered with seasoned ripe mashed avocado, then finished with an egg, salsa, and some feta cheese. That’s my favorite way to make it, but the possibilities are practically endless. Variations are included below so you can easily keep your toast interesting every time!

Helpful Tips & Variations
- Hash brown patties. This recipe calls for precooked frozen hash brown patties. No need to defrost them first.
- Pick the best avocados. Pick avocados that are ripe, but not overly ripe – they should have a little give when you gently squeeze them, but not be at all mushy. Avoid avocados that are bruised or have brown spots.
- Eggs your way. Top your toast with a fried egg, poached egg, or scrambled eggs.
- Salsa. Avocado and salsa love one another. Pico de Gallo is also delish.
- Try a different cheese. I finish off our toast with a bit of crumbled feta cheese. Cotija is another good choice and you can’t go wrong with cheddar.
- Everything Bagel Hash Brown Avocado Toast. We’re pretty obsessed with our everything bagel seasoning and love to sprinkle it on, well, everything! It would go great on this toast along with some smoked salmon.
- Mushroom-Spinach Hash Brown Avocado Toast. Sauté some mushrooms, spinach, and garlic in a bit of butter. Season with salt and pepper and stir in some herbs, if desired.
- Tomato-Basil Hash Brown Avocado Toast.. Fresh ripe sliced tomatoes, balsamic glaze, and fresh torn basil leaves.
- Other toppings. Pickled red onions, pickled radish, or candied jalapeños are like little added flavor explosions.
Hash Brown Avocado Toast

Ingredients
- 4 (2.25 ounces each) frozen hash brown patties
- 1 ripe avocado
- 2 teaspoons fresh lemon juice
- 1 teaspoon sriracha
- salt and pepper, , to taste
- 4 large eggs, (prepared fried, poached, or scrambled)
- 1/2 cup salsa
- 1/4 cup crumbled feta cheese, (or cotija)
Instructions
- Lightly mash the avocado with a fork until it's smooth, but still has texture. Mix in the lemon juice, sriracha, and some salt and pepper. Taste and adjust seasoning, if desired.
- Place frozen hash brown patties in your air fryer basket, in a single layer, leaving space in between each patty. Air fry at 400F for 12 minutes, flipping halfway.
- While the hash browns cook, prepare the eggs how you like them. We love this toast with a fried egg, poached egg, or scrambled eggs.
- Remove the hash browns from the air fryer and top each with a quarter of the mashed avocado, a cooked egg, a turn or two of fresh cracked pepper, 2 tablespoons of salsa, and 1 tablespoon cheese.
- Serve immediately and enjoy!

Preparation and Serving Suggestions
You can cook as many hash browns as you are able to fit in your air fryer basket, but I’d recommend no more than 4 at a time to not overcrowd the air fryer and make sure they crisp up properly. If making more than 4 toasts, air fry in batches, or you can certainly bake them in the oven!
Avocado toast should be served immediately, it’s not a make ahead meal or something that can sit for too long because the avocado will turn brown pretty quickly.

Just made this wonderful avocado toast breakfast on Texas toast didn’t have hash browns on hand .But it was so good didn’t have feta cheese on hand but it was still so so good.Thank you for posting your recipes.
