Copycat Chipotle Honey Vinaigrette

This chipotle honey vinaigrette dressing from Chipotle has become so wildly popular that some restaurants have been running out, and they’ve even started charging extra for the tiniest amount. So I’m sharing how to make it at home. It’s a bit smokey, a bit tangy, and a bit sweet. So good on salads, tacos, and quesadillas, or use it as a marinade for grilled chicken or steak. It’s an anytime, any day kind of condiment.

What Makes This Chipotle Honey Vinaigrette Recipe So Great?

  • Just like your favorite. I made this dressing with the intent of getting an exact replica of my favorite dressing from Chipotle, their chipotle honey vinaigrette. And I really feel like it’s spot on in flavor and consistency.
  • Sweet and savory. I love the play between the smoky spice of the chipotle peppers and the slight sweetness of the honey. It makes your tastebuds sing!
  • Versatile. I will put this dressing on pretty much anything. It’s fantastic on salad but it also doubles as a marinade or even a condiment for a burger or burrito. Check out the section “Ways To Use It” below for inspiration.

Ingredients Needed

Here’s what you’ll need to make this chipotle honey vinaigrette recipe at home.
(Scroll down to the recipe card below for details and precise measurements.)

  • Red wine vinegar – This provides a great bold tangy flavor.
  • Honey – For a bit of sweetness and to help balance out the vinegar. Without it, the dressing will be too harsh.
  • Canned chipotle peppers in adobo sauce – This is jalapeรฑo chiles that have been dried, smoked and then packed in a flavorful sauce made of tangy tomatoes and spices. It adds a wonderful smoky flavor and some heat.
  • Seasonings – Coarse salt, black pepper, and dried oregano for flavor.
  • Water – Thins the dressing just a bit.
  • Vegetable oil – This neutral cooking oil has a mild flavor and gives the dressing body while also helps to dissolve any spices.

How To Make Chipotle Honey Vinaigrette

Time to rev up your blender! Here’s a quick look at how to make chipotle honey vinaigrette.
(For more detailed instructions, scroll to the recipe card below.)

  1. Blend. Pulse the red wine vinegar, honey, chipotle peppers, salt, pepper, oregano, and water together in a blender to combine.
  2. Emulsify. With the blender running, drizzle in the oil. Blend until thick.
  3. Season to taste. Taste the dressing and adjust the seasoning if needed.

Tips & Variations

This is a super simple recipe but here are a couple of tips and tricks to help you get it perfect the first time.

  • Use the right blender. When making smaller batches of dressing, it’s a good idea to use a smaller blender if you have one. Larger blenders will just splatter everything around without doing much blending. I suggest a mini Ninja or a Bullet blender for this recipe.
  • Blend just enough. Over-blending a vinaigrette after adding the oil can cause the oil to become bitter. So blend just until everything is emulsified. No more.
  • Bump up or tone down the heat. If you like spice, consider adding a dash of cayenne to the dressing. A little extra adobo sauce would also do the trick. Alternatively, you can add more honey if you want it less spicy.
  • Try a different oil. If you’re not a big vegetable oil person, you can use olive oil or avocado oil here instead, but keep in mind it will change the flavor and no longer be a true copycat recipe.

Ways To Use It

I love drizzling salads with this chipotle honey vinaigrette, but its uses don’t stop there. You can also use it as a marinade for chicken, beef, or pork. You could even brush it over meat or seafood on the grill to add moisture and flavor. I love it so much that I’ll use it as a condiment for my Birria Tacos, Baked Chicken Taquitos, or these Chicken Burrito Bowls.

Proper Storage

Keep any leftover dressing stored in a glass jar, fastened with the lid, in the refrigerator for up to 5 days. Itโ€™s normal for the oil and vinegar to separate during storage โ€“ just shake the jar to incorporate everything again. Itโ€™s also normal for it to solidify a bit. If your dressing does firm up, let it sit at room temperature for about 30 minutes and then shake to incorporate again.
