Poppy Seed Dressing

This creamy poppy seed dressing is sweet, tangy, and incredibly easy to make with a handful of simple pantry ingredients. It comes together in just a few minutes and has a smooth, velvety texture with little bursts of crunch from the poppy seeds. I love drizzling it over spinach salads, fruit salads, and strawberry salads, especially during the spring and summer months when fresh produce is at its peak. The flavor is perfectly balanced and far better than most store-bought versions, making it an easy homemade staple youโll want to keep in the refrigerator.

5-STAR REVIEW
I started making this poppy seed dressing years ago because I was tired of buying bottles that were either overly sweet or strangely thick. One spring afternoon, while putting together my strawberry spinach salad for a family gathering, I decided to make my own version and never looked back. After testing different ratios of vinegar, sugar, and mayonnaise, I found that the secret is balance. The dressing should be sweet enough to complement fresh fruit, tangy enough to brighten leafy greens, and creamy enough to lightly coat every bite without weighing the salad down. Itโs still my favorite dressing for that strawberry spinach salad, but I also use it on fruit salads, mixed greens, and even grain bowls throughout the spring and summer. Now itโs one of my go-to dressings for everything from casual weeknight dinners to holiday brunches and backyard cookouts.

Helpful Tips
- Pair it with the right salads. This dressing shines on spinach salads, strawberry salads, fruit salads, and salads with nuts, cheese, or dried fruit, where its sweet and tangy flavor can really stand out.
- Whisk until completely smooth. Take a minute to fully dissolve the sugar and incorporate all of the ingredients. The dressing should look silky and creamy with no graininess remaining.
- Adjust the consistency as needed. The dressing will thicken slightly as it chills. If it becomes too thick for your liking, whisk in a splash of milk until it reaches your desired consistency.
- Let it chill before serving. Even 30 minutes in the refrigerator helps the flavors meld together and gives the dressing a more balanced sweet-tangy flavor.
- Taste and customize. Before serving, give the dressing a taste and adjust it to suit your salad. Add a little more sugar for sweetness or a splash of vinegar for extra tang.
- Shake or whisk before using. The ingredients naturally settle as the dressing sits. Give it a quick shake or whisk to bring it back to a smooth, creamy consistency.
- Use fresh poppy seeds. Poppy seeds can lose flavor over time, so using a fresh container will give the dressing the best texture and flavor.

Serving Suggestions
I always keep a jar of this poppy seed dressing in the refrigerator during the spring and summer because it instantly makes simple salads feel a little more special. One of my favorite ways to use it is on my strawberry spinach salad, where the sweet-tangy dressing complements the juicy berries, spinach, and creamy cheese perfectly. For holiday meals or brunch gatherings, I love serving it with my pear salad since the dressing enhances the natural sweetness of the fruit without overpowering the other flavors. Itโs also a great choice for potlucks and picnics because it holds up well and pairs beautifully with the crunchy vegetables and savory ingredients in my broccoli salad. It also works wonderfully with my mandarin orange salad, making it an easy option for spring brunches, summer cookouts, and any meal that could use a bright, fruit-forward side dish.
How to Store Leftovers
Store the poppy seed dressing in an airtight jar or container in the refrigerator for up to 1 week. Give the dressing a good shake or whisk before serving. The ingredients naturally separate as the dressing sits, and a quick mix brings it back to a smooth, creamy consistency.
Make Ahead
Prepare the dressing up to 3 days in advance to give the flavors time to meld. Keep it refrigerated until youโre ready to serve.
Freezing
I donโt recommend freezing this dressing. The mayonnaise and dairy can separate as they thaw, which affects the texture and consistency.

I have a new love.
OMG! This recipe is awesome! This dressing is exactly what I was looking for. So glad I decided to use this recipe!
Delicious! I made this dressing for a party and received several compliments. Thank you for creating such a wonderful recipe.
My new favorite dressing. Fantastic flavors. I’ve tweaked it a bit occasionally due to me running out of an ingredient but it’s perfect as it is written. Thanks Amy!
Can you substitute honey for the sugar? Thank you
I have used honey and agave syrup, it works fine although it ends up being a little runnier but not a big deal! The flavor is amazing either way!
I made this recipe last week. There are only 2 people living in this house and we ate it all! I made another batch today. This is so good and can be used with spinach salad that includes apples, onions and walnuts. Fabulous. We use it on every salad we make and enjoy it daily. Thank you so much. Any chance you have a good ranch dressing in the works?
The best recipe around. I love it.
This was easy and wonderful.
Vinaigrette is tough….but what always gets me are focaccia and frittata. (<–those are probably not spelled right). Who knows where the double c's and double t's go?!
Loved it! Made this with your recommended strawberry spinach salad.
Truly an all time favorite, right? So glad you love it as much as we do!
YUM! Loved this dressing recipe!
Cannot wait to make this.
Hi Amy, lovely dressing, but not being American I’m not too sure what half n half is? I see you can substitute milk, so is it a product of half milk half cream? Can’t wait for the salad recipe!!
Half-and-half is a simple blend of equal parts whole milk and light cream, so you could just do 2 tablespoons of each. Or you can just use whole milk, but as mentioned, it will be a little thinner. Enjoy!
love this creamy poppyseed dressing. I always drench my salads in dressing. . I never go light on the salad dressing so love this, yo.
This looks and sounds awesome!
