Lemon Bars, move over! Here comes the next greatest lemon recipe with these delicious Lemon Blondies. With a texture somewhere between a brownie and a lemon bar, these Lemon Blondies are super moist and soft, and absolutely irresistible.
All you need is 6 ingredients for the blondie base and 3 ingredients for the sweet-but-tart lemon glaze! Fresh lemons are a must, of course. I love making this in the spring and summer!
Blondies vs Brownies
What’s the difference between blondies and brownies? Not much. Blondies are essentially brownies without any chocolate. Some blondies, like these lemon blondies, also have a slightly different texture and contain less brown sugar as well. But, while I call them blondies, you could just as easily call them lemon brownies.

For the Blondie
- Butter – If using unsalted butter, make sure to add a little pinch of salt to enhance the flavor.
- Sugars – Granulated sugar and a small amount of light brown sugar are both used. The brown sugar adds moisture and a richer sweetness but only 1/4 cup is used to keep these from becoming too rich.
- Eggs – Helps give the lemon blondies structure.
- Lemons – The star of the show. You’ll need the juice and zest of 2 large lemons.
- Flour – Be sure to use the spoon and level technique for accurate measure.
- Baking soda – Our leaving agent to give the blondies some lift.
For the Glaze
- Powdered sugar – Don’t use granulated sugar or the glaze will be gritty.
- Lemon juice – Fresh lemon juice will give you the best flavor, but using concentrated lemon juice is also an option.
- Heavy cream – Switch out the heavy cream with half and half or whole milk, if preferred.

How to Make Lemon Blondies
These lemon brownies come together in a few quick and easy steps. Here’s a summary:

- Make the blondie batter. Beat the butter and sugars until well creamed, then mix in the eggs. Add the lemon juice and zest, followed by the flour and baking soda. Mix on low until fully combined.
- Bake. Transfer the batter to a baking dish lined with parchment paper. Bake for 25 to 30 minutes. Set aside to cool.
- Add the glaze. Whisk the glaze ingredients together until smooth. Pour over room-temperature blondies and let sit for 10 minutes.
- Serve. Once the glaze has set, cut the blondies into squares and enjoy.
Tips for Success
Here are a few tips to help ensure the blondies don’t stick to the pan and more.
- How to easily remove the blondies from the pan. If you don’t have any parchment paper, you can use cooking spray, but make sure to be very careful when removing the blondies from the dish. In fact, I recommend waiting until after they are glazed, then cut them, before removing them from the baking dish. Otherwise, you can remove the blondies from the dish using the parchment paper before you glaze them.
- Adjust the glaze consistency. The consistency of the glaze should be just right based on the instructions of the recipe. You want a glaze that will slowly move and will create a nice, flaky crust on top of the blondie. If the glaze is too thin, you can add a tablespoon of powdered sugar. If it is too thick, add 1/2 teaspoon of lemon juice at a time until you reach the desired consistency.
- Create a brownie-like texture. This particular blondie is more reminiscent of a lemon bar than a brownie. It’s so soft and moist. However, if you want the consistency to be more brownie-like, add an extra 1/4 cup of salted butter.
- Allow to cool before glazing. One important thing to note is that the blondies must cool to room temperature before adding the glaze. Otherwise, the glaze will just melt.
How to Store
- How to store lemon blondies. These blondies can be stored at room temperature, in an airtight container, for up to a week. You can also wrap them in plastic wrap and refrigerate them for 2 to 3 weeks.
- Can I freeze lemon blondies? You can, just note that the glaze may become thinner as they thaw. Wrap them individually in plastic wrap for the best results. Thaw in the fridge or at room temperature then enjoy.

Ingredients
For the Blondie
- 3/4 cup butter , softened
- 1 cup granulated sugar
- 1/4 cup light brown sugar
- 3 large eggs
- 2 large lemons , juiced and zested
- 1 1/4 cups all-purpose flour , spooned and leveled
- 1/4 teaspoon baking soda
For the Glaze
- 2 cups powdered sugar
- 3 tablespoons lemon juice (~1 medium lemon)
- 2 tablespoons heavy cream
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a 9×13 inch baking dish with parchment paper.
- In a large bowl with a stand or hand mixer, beat the salted butter, granulated sugar and light brown sugar together until well creamed, about 2-4 minutes.
- Mix in the eggs, one at a time, until completely combined.
- Add the lemon juice and zest and beat together until well-mixed.
- Add the flour and baking soda to the bowl. Mix on low speed and beat everything together just until fully combined.
- Pour into the prepared baking dish and bake in the oven for 25-30 minutes or until a toothpick comes out clean.
- When done baking, take the blondies out of the oven and set them aside to let cool before glazing. They should cool to room temperature.
- In the meantime, make the glaze by whisking the powdered sugar, lemon juice and heavy cream together until smooth.
- Pour the glaze over the cooled blondies and let the glaze set.
- Cut the blondies into squares and enjoy!
