Soft and moist, these Lemon Blondies are the ultimate easy lemon dessert for lemon lovers! They come together in just a few steps, made with freshly squeezed lemon juice and pantry staples.
Preheat the oven to 350 degrees Fahrenheit and line a 9x13 inch baking dish with parchment paper.
In a large bowl with a stand or hand mixer, beat the salted butter, granulated sugar and light brown sugar together until well creamed, about 2-4 minutes.
Mix in the eggs, one at a time, until completely combined.
Add the lemon juice and zest and beat together until well-mixed.
Add the flour and baking soda to the bowl. Mix on low speed and beat everything together just until fully combined.
Pour into the prepared baking dish and bake in the oven for 25-30 minutes or until a toothpick comes out clean.
When done baking, take the blondies out of the oven and set them aside to let cool before glazing. They should cool to room temperature.
In the meantime, make the glaze by whisking the powdered sugar, lemon juice and heavy cream together until smooth.
