If I had a dollar for every time someone asked me if they could double the recipe for my awesome hash brown quiche recipe, I’d be rich! So I came up with another solution, by converting it into this Hash Brown Egg Casserole. Get ready to fall in love with this recipe, too. This egg breakfast casserole is legitimately so simple, no-fuss with only a few steps, filling, and delicious!

Hash Brown Egg Casserole

Ingredients
- 8 precooked frozen hash brown patties, (thawing is not necessary)
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 1/2 cups diced ham
- 2 scallions, diced
- 9 large eggs
- 1 cup whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon dry ground mustard, optional but recommended
- 1/4 teaspoon garlic powder
Instructions
- Preheat oven to 350 degrees F. Grease a 9×13 baking dish.
- Arrange frozen hash brown patties in the dish, in a single layer.
- Sprinkle both cheeses, ham, and scallions evenly over the top of the hash browns.
- In a large bowl, whisk together the eggs, milk, salt, mustard, and garlic powder.
- Pour the custard evenly over the ham mixture.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 20 minutes or until the edges are golden and a knife inserted in the center comes out clean.
- Allow to cool for 5-10 minutes, then cut into portions and serve.

How To Make Hash Brown Egg Casserole Step By Step

Gather your ingredients. Preheat oven to 350 degrees F. Grease a 9×13 baking dish.

Arrange 8 precooked frozen hash brown patties in the dish, in a single layer.

Sprinkle 1 cup shredded sharp cheddar cheese, 1 cup shredded Monterey Jack cheese, 1 & 1/2 cups diced ham, and 2 diced scallions evenly over the top of the hash browns.

In a large bowl, whisk together 9 large eggs, 1 cup whole milk, 1/2 teaspoon salt, 1/2 teaspoon dry ground mustard, and 1/4 teaspoon garlic powder.

Pour the custard evenly over the ham mixture.

Cover with foil and bake for 25 minutes. Remove foil and bake for another 20 minutes or until the edges are golden and a knife inserted in the center comes out clean.

You can prep and serve this hash brown casserole right away, assemble it the night before, or freeze for later.
- Leftovers: cool completely, then store in an airtight container in the fridge for up to 3 days.
- Make it ahead of time: want to prep this the night before serving? No problem. Simply assemble as you would up to pouring the eggs over the hash browns. Then cover tightly with plastic wrap and refrigerate up to 24 hours in advance. Remove from the fridge when the oven is preheating and add an extra 10-15 minutes to the total baking time.
- Freeze for later: bake in a freezer-safe pan (like a foil disposable pan) and cool completely. Wrap well in plastic and again in foil and freeze for up to 2 months. Thaw overnight in the fridge, then cook at 350 degrees F for about 30 minutes until warmed through.
What to Serve with Egg Casserole
I recommend serving this with Roasted Asparagus or Cucumber Tomato Salad to round out the meal. Delicious!

Can I use 1% milk or does it have to be whole milk?
Whole milk is ideal. I wouldn’t recommend using less than 2% to ensure the custard is thick enough and cooks properly.
This egg bake is so versatile and delicious.
I have made a few different versions. We like to saute mushrooms and/or breakfast sausage and then cut into small bites and add on top of the potatoes. I also finely chop onion and add it for more flavor not that it’s not perfect already.

If I’m going to switch out the ham for ground sausage, do I need to cook the sausage first or just throw it in raw and let it cook with everything else’s

This is currently baking, it was easy to make and I can’t wait to taste it. My problem was the hash browns I bought were too big to line up in a single layer, so I had no choice but to overlap the ends. I could have softened them in the microwave or air fryer but the directions said to use frozen and I didn’t see the note about assembling ahead of time. Next time I will use tater tots. I’m sure it will come out great, and I’ll let you know!

I cut this recipe in half, cooked peppers, onions and fresh mushrooms with the 1/2 lb sausage. It was excellent and I would definitely make it again. By the way, it also reheated well!
Made this dish on Christmas morning. l halved the recipe (just my husband, son and me) and added bacon instead of ham. It cooked beautifully and the egg seeped to the bottom and actually made a nice sort of crispy crust underneath the hashbrowns. Yummy!

Do you cook the hashbrowns a little before adding all Ingredients? Or can you. To maybe try to prevent sogginess? Haven’t made it yet, but want to Christmas mornin.
I don’t cook the hash browns first – they go right into the pan frozen, eliminating an extra step. But you definitely can.
I love this recipie, but my bake always takes much longer to get the center to set. How can I prevent this? I usually have to cook with the foil on for almost double the time.
Hi Megan! Sorry you’re having issues. I have made this so many times with perfect results, so I can’t say. Are you sure you’re cooking it at the right temperature? Not adding more liquid than is called for? Baking with foil for 25 minutes and then baking without the foil for another 20 minutes?
I really enjoyed this casserole! It was easy and had ingredients that I keep on hand.
For the meat I used a combination of ham and cooked, crumbled bacon, used whatever cheeses I had on hand, and it turned out great!

This was a BIG hit in my house! Only thing I did different was use hot Jimmy Dean sausage instead of ham. I served it for dinner with steamed broccoli and fruit salad.

I have made this breakfast casserole for several different occasions and everyone absolutely loves it. I however have always used turkey sausage instead of ham and I also include chopped green chilies for extra flavor. It’s simple and delicious!!!

Great recipe! I bake hash brown patties in the pan for 15 minutes then add the egg mixture and cook for additional 25(covered). Then add an additional 5-10 minutes uncovered.That makes the bottom more crispy.
This was a great recipe, quick to fix and delicious. My husband and I enjoyed the meal very much with some cut up oranges, pears and my daughter in law’s Donut peaches!
Easy to do. Used browned turkey sausage added sautéed onions/mushrooms (make sure you sautéed them first or you’ll have a wet casserole). Put it all together the night before (including custard). Will need to cook a bit longer out of the fridge but it came out great. Thanks for sharing!

I don’t know if I doing this right. When I go to make this and follow the instructions and ingredients, once it has been in the oven for the first 25 minutes with the foil, after the foil gets removed, the eggs still look runny and not cooked all the way through, then again without the foil for the last 20 minutes, the eggs jiggle and don’t look cooked. I don’t know what I am doing wrong.
