What is a bagel egg boat? Basically, a bagel quiche. They take scrambled eggs and a bagel and turn it into a fun breakfast that can be customized to your preferences. This recipe includes two versions of these egg-stuffed bagels, though they are both made the same. One features bacon, cheddar, and chives, while the other has a little Tex-Mex vibe with some salsa verde, Monterey Jack cheese, and cilantro.
Of course, those are just two options – you can really add in any fillings you’d like. Just make sure there’s egg and cheese to hold it all together!
Ingredients Needed
These bagel quiches require just a handful of ingredients – pretty similar to what you’d need if baking a regular quiche (plus the bagels).

- Bagels – These will be hollowed out so opt for a large, thick bagel and avoid bagel thins as they won’t hold the filling.
- Butter – Spread inside the hollowed out bagels for moisture and richness.
- Eggs – You’ll need two eggs for each bagel.
- Whole milk – 2% will be fine too. This helps make the eggs light and fluffy.
- Seasonings – I add salt, pepper, and cayenne pepper to my eggs. You can skip the cayenne pepper if desired.
- For the bacon and cheddar – For the bacon and cheddar bagel boat, I add bacon bits (crumbled bacon works great too), sharp cheddar, and diced fresh chives.
- For the salsa verde version – For this version, I use my homemade salsa verde, Monterey jack cheese, and fresh cilantro.

How to Make Bagel Egg Boats
These fun bagel boats are ready in just 30 minutes or so. Quick and easy, they’re perfect for an easy weekend brunch or breakfast.

- Prepare the bagels. Hollow out the bagel halves, being careful not to tear a hole into the center or bottom. Spread the butter inside each half and transfer to a baking sheet lined with parchment paper.
- Make the egg mixture. Combine the eggs, milk, and seasonings.
- Assemble the bacon and cheddar bagel boats. Divide the bacon bits, cheese, and chives into two bagel halves. Top with half of the egg mixture.
- Assemble the salsa verde bagel boats. Divide the salsa, Monterey Jack, and cilantro among the other two bagels. Top with the remaining egg.
- Bake. Bake for 20 minutes, until the eggs are fully cooked and the bagel is toasted and golden around the edge.
Serving Suggestions
These are a great portable breakfast if you need something on-the-go. If sitting down to breakfast or brunch and want a more complete meal, you can serve these with a fruit salad or a coffee banana smoothie.
How to Store & Reheat Leftovers
- Storing leftovers. Bagel egg boats are best baked immediately after being assembled before the bagel can get soggy. However, any extras can be stored in the fridge for up to 2 days.
- To reheat. To reheat, just pop them in the oven at around 350F or microwave, until heated through. The egg may have a slightly different texture but overall, it will still be delicious!

Ingredients
Bacon and Cheddar
- 1 large bagel , split in half
- 1 tablespoon butter , softened to room temperature
- 2 large eggs
- 1 tablespoon whole milk
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- pinch of cayenne pepper
- 2 tablespoons bacon bits
- 1/4 cup grated sharp cheddar cheese
- 2 teaspoons diced fresh chives
Salsa Verde
- 1 large bagel , split in half
- 1 tablespoon butter , softened to room temperature
- 2 large eggs
- 1 tablespoon whole milk
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- pinch of cayenne pepper
- 3 tablespoons salsa verde
- 1/4 cup grated Monterey Jack cheese
- 2 teaspoons diced fresh cilantro
Instructions
- Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Hollow out each bagel half, being very careful not to tear into the center hole or through the bottom (or the eggs will leak out.) Discard excess bread or save for another use. Spread some of the butter on the inside of each bagel half. Transfer all 4 bagel halves to the prepared baking sheet.
- In a mixing bowl, whisk together the eggs, milk, salt, pepper, and cayenne.
- For two bagel halves, evenly divide the bacon bits, cheese, and chives. Then pour in the egg mixture.
- REPEAT this process with the other two bagel halves, using the salsa, Monterey Jack cheese, and cilantro.
- Bake for about 20 minutes or until eggs are cooked through and set and the bagel is toasted and golden around the edge.
You breakfast bagel was wonderful. I made a variation with a cinnamon and raisin bagel filled with apples and butter. They were delicious. Then I tried a blueberry bagel with blueberries and blueberry cream cheese. Mixed berry works well too.
