I know a lot of people are excited for the Fall season; thinking about soups and stews and casseroles, oh my. Not me. I am in complete denial.

Itโ€™s not that I donโ€™t like Fall. Quite the contrary. Itโ€™s just that Fall turns into Winter. And I loathe the cold Winter. Colder than cold. Like, there-isnโ€™t-enough-lotion-on-the-planet-to-keep-my-skin-moist cold. Like, it-takes-three-space-heaters-and-two-down-comforters-to-keep-me-warm cold. Like, my-eyeballs-hurt-when-I-step-outside itโ€™s so cold.

In my utter defiance, I made these Tropical Chicken Lettuce Wraps. And they have all kinds of great things going for them.

Great things about these chicken lettuce wraps

  1. I didnโ€™t need to use my stove or oven, which I am struggling to avoid, as we attempt to keep the house spotless for showings. (Oh, how I hoped it would sell before the first snowfallโ€ฆ)
  2. Theyโ€™re simple and quick. Always love that.
  3. The lettuce is your utensil, so there’s no dirty silverware to clean up. Whew.
  4. My kids were immediately interested because they got to eat with their hands. Score.
  5. I was able to use my mango splitter. Ya, baby!
  6. I used my favorite Cilantro-Lime Dressingย > SO GOOD.

They were tangy, had just the right amount of crunch from the lettuce and macadamia nuts, and fantastic color. Tasty, tasty.

And the nameโ€ฆwhat about the name? It screams summer. Bright, fresh, easy, delicious. And if you use rotisserie chicken, you don’t need to turn on the oven!

I will not go down without a fight.

Tropical Chicken Lettuce Wraps

These Tropical Chicken Lettuce Wraps are easy, bright, fresh, delicious, and scream summer!

Ingredients 

  • 3 cups chopped cold cooked chicken
  • 1 cup diced mango
  • 1/2 cup diced scallions
  • 1/2 cup finely diced red bell pepper
  • salt and pepper
  • 1/2 cup Cilantro-lime dressing
  • 12 small butter lettuce leaves
  • 1/2 cup coarsely chopped macadamia nuts, ,optional

Instructions 

  • Place chicken, mango, scallions, and bell pepper in a medium bowl; season with a little salt and pepper. Drizzle with dressing and toss lightly to coat.
  • Spoon mixture into lettuce leaves.
  • Serve with a sprinkle of chopped macadamia nuts, if desired.

Notes

For the chicken, you can use rotisserie, grilled, or baked (seasoned.)

    I tend to only think about time passing in spurts. So I just don’t think ahead enough to remember that winter comes after fall. That would just be too much info to process. I blame it on this whole 7-8 year MD/PhD program. If I think to myself – I’m going to be in school for the next 8 years, I kind of die a little inside, so I have to break it up into pieces.

    Winter is horrendous – you are definitely right about that. But soon you will be in CA and so you won’t have to worry about such things!

    I love any recipe that (a) has mango in it, (b) has the word tropical in its title, and (c) allows me to eat with my hands. Am I a five year old? Probably.

    Lora – here’s my take on a few of the lettuce varieties:

    Iceberg lettuce has very little taste, but like you said, lots of crunch. It’s a great lettuce to use when the ingredients surrounding it have enough flavor on their own.

    Bibb lettuce is pretty popular, too, mainly because of its slightly sweet taste. Bibb lettuce is a great base for fruit salads, tuna and chicken salads.

    Romaine lettuce has a mild flavor and is probably used in Caesar Salads because those flavors are so complex to begin with.

    I love Butter lettuce. It’s mild and…well…buttery. But it is soft, with very little crunch.

    I guess I take those factors into consideration when making salads and wraps like these. Honestly, I bet they’re all pretty interchangeable. But some certainly have more flavor and bite to them.

    Keep bringing on those summer salads! Funny, we just made the peanut lettuce wraps you posted earlier. Used butter lettuce, thinking it healthier than iceburg lettuce. Didn’t have that same crunch, though. Do you find some lettuce works better than others? I love the mango in it, looks delicious.

    I’ve just started thinking about soup, too. But these lettuce wraps look great for lunch or even a quick snack. Come to think of it, they would make a good pairing with soup for dinner.

    Yes, I am one of those people looking through my soups and stews recipes and wanting to cook my lasagna. Today will only be 73 degrees, and I am ready to do a little jig (those of you who have ever been to Sacramento, CA in the summer will understand).

    However, these are making me drool by just looking at them. So…before mangoes go out of season, I *will* make these.

    The Wraps: They look great. I love lettuce wraps. So easy and tasty. And I’ve never had ’em with mango. I’ll have to try that.

    The Season: Fall is a really wonderous time up here in Minnesota. IMHO, the best time of the year up here. Cool, crisp morning… bright red and yellow leaves against brilliant cyan skies… warm soups… tweed jackets… Enjoy it. Don’t deal with or think about winter until you have to. It just gives that thing you hate more power. Then you can just appreciate the lettuce wraps for their loveliness and not for the loss they represent. Or you can do what you did. They’re both good. HA! ;)

    I ate chicken pot pie tonight and I feel like I weigh a ton. It’s not even cool here, so who am I fooling? I miss my salads and fruits, too. This looks so fresh and tangy. I miss that lighter than air feeling after a meal like this.

    And a mango splitter? That is a dream gadget! That big hulking seed is my nemesis and it keeps me from reaching for a mango when I pass them in the aisle.

    Heh. I had to laugh. So, these are kinda like “denial wraps”?
    They look fabulous — love the mango/pepper/scallion combo. And lettuce wraps are always so fun (not to mention gorgeous)
