What Is Red Velvet?
Red velvet is, technically, a type of chocolate cake (or cupcakes or cookies). It has a tangy flavor from buttermilk and vinegar and less of a rich, chocolatey taste. Red velvet actually became popular in the Victorian Era, when it was served to the elite and on special occasions.
So where does the red coloring come from? Part of it comes from the cocoa reacting with the vinegar but most of it comes from red food coloring. Without the food coloring, red velvet would have a lighter color, not the bright red we’ve associated it with. The taste would still be the same.

- Does the brand of cake mix matter? No, these cookies can be made with any brand of cake mix.
- Switch up the add-ins. If you’re not a fan of cookies n creme, you can also use chopped dark chocolate, milk chocolate or white chocolate.

- Can I make these in advance? Yes, you can make the cake mix cookie dough 2 days in advance. Pre-scoop the dough and transfer to an airtight container. Store in the fridge.
- How to store baked cookies. After the cookies cool completely, transfer to an airtight container. They will last for 4 days at room temperature.
- Can I freeze cake mix cookies? Yes, you can freeze both the cookie dough and baked cookies. To freeze the dough, scoop onto a sheet pan and flash freeze. Once frozen solid, transfer to a freezer-safe plastic bag. This is perfect for those days when you just want to bake one or two cookies. To freeze the baked cookies, allow them to cool then place in a freezer-safe bag. They’ll last for up to 1 month in the freezer.

Red Velvet Cookies
Ingredients
- 1 box red velvet cake mix
- 2 large eggs , room temperature
- 1/3 cup vegetable oil
- 4 ounces Hershey’s Cookies N’ crème candy bar , chopped (see note)
- 1/3 cup pink and white sprinkles
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set it aside.
- In a large mixing bowl combine the red velvet cake mix, eggs, and vegetable oil. (The batter will be thick.)
- Add in the chopped candy bar and sprinkles.
- Using a cookie scoop, form tablespoon-sized dough balls and place on the prepared baking sheet.
- Bake in preheated oven for 10-12 minutes just until cookies start to crack.
- Remove from oven and allow to cool completely before serving.

I have found that Pillsbury and Betty Crocker brands make the best cookies (I use Pillsbury Devils Food and BC White most often), they are the most moist and flavorful. I love Duncan Hines for my Bundt cakes, but not for cookies. Also I use shortening instead of oil (melted in microwave) and my cookies stay moist and yummy for two weeks.
