These 2-ingredient Rolo Ritz Sandwich Cookies are a sweet throwback treat that disappear almost as fast as you can make them. Buttery Ritz crackers and soft, gooey Rolo candies come together to make the easiest salty-sweet bite with almost no effort at all. They’re perfect for beginners, great for making a big batch, and I love how there’s basically no prep beyond unwrapping the candy!

I know these Ritz sandwich cookies aren’t technically cookies, but when they’re this buttery, chocolatey, and impossible to stop eating, I’m not too concerned about labels. All you need to do is place a Rolo on each Ritz cracker, bake until softened, then press another cracker on top while the candy is warm. They set up into the most irresistible little treats with crisp crackers on the outside and a smooth caramel chocolate middle. Easy enough for anybody to make, dangerous for everybody.
Helpful Tips & Variations
- Bake just until the Rolos soften. You want them shiny and soft, not melted flat. If they get too hot, the chocolate can start to seize, and the caramel will spread too much when pressed.
- Make them gluten-free. Swap the Ritz for your favorite gluten-free butter crackers.
- Add extra chocolate. Drizzle the tops with melted semisweet chocolate chips, almond bark, or candy melts for an easy finishing touch, or dip the sandwiches completely if you want them fully coated like my Ritz cracker cookies. For full coverage, plan on about 2-2½ cups candy melts, almond bark, or chocolate total.

Ingredients
- 48 Ritz crackers
- 24 Rolo candies, unwrapped
Instructions
- Preheat oven to 325℉. Line a rimmed baking sheet with parchment paper.
- Lay half of the ritz crackers top-side down on a parchment.
- Place an unwrapped rolo candy on top of each cracker.
- Bake just until they’re shiny and soft (but not melted and flat), about 4 minutes.
- Remove from the oven and immediately sandwich another ritz cracker on top of the warmed Rolo (top-side up), gently pressing down to flatten the candies and spread to the edges.
- Cool at room temperature until set, or chill in the fridge to speed things up.

How to Make Rolo Ritz Sandwich Cookies Step by Step

Gather all of your ingredients. Preheat the oven to 325°F and line a rimmed baking sheet with parchment paper.

Top with the Rolos: Arrange 24 Ritz crackers on the prepared baking sheet with the top side facing down. Place 1 unwrapped Rolo candy in the center of each cracker.

Bake and finish: Bake for about 4 minutes, just until the Rolos look glossy and softened. They should give slightly if gently pressed, but shouldn’t be melted so much that they lose their shape or start running off the crackers.
Right out of the oven, top each one with another Ritz cracker, placing the second cracker top side up to make a sandwich. Gently press on the tops just enough for the softened caramel and chocolate to spread toward the edges.

Cool: Let the Rolo cracker sandwiches cool at room temperature until the filling firms up, or transfer them to the fridge if you want them to set faster. It only takes a few minutes. Enjoy!

How to Store Leftovers
- Room temperature. Store the Rolo Ritz sandwich cookies in an airtight container for up to 5 days. Make sure they’re fully cooled first so you don’t trap any warmth, which can make the crackers soft.
- Freezer. These freeze well for up to 2 months. Let them cool and set completely, then place them in a freezer-safe container with parchment or wax paper between layers so they don’t stick together. Thaw at room temperature before serving.
