Low Carb Ham and Pickle Roll Ups
Cool and crunchy, savory and a bit salty – these ham and pickle roll ups are made with just 3 ingredients for a quick and easy low carb appetizer or snack. These are great for the afternoons when you’re just craving a little something but they are also a guaranteed hit at parties and gatherings.
I typically use dill pickles and regular deli ham for these, along with chive and onion cream cheese, but there are so many ways to switch it up. You can use your favorite pickles and everything from smoked to peppered ham. Sprinkled with everything bagel seasoning is also a nice touch for added flavor and visual interest.
Ingredients Needed
You’ll need just 3 ingredients to prepare this low carb appetizer or snack.

- Whipped cream cheese – I love whipped cream cheese for this snack, as opposed to a brick, since it’s so easy to spread, plus it comes flavored. I used chive and onion but garlic and herb cream cheese also works. Be sure it’s at room temperature so it’s easy to spread without ripping the ham.
- Pickles – Use any pickles you like! Dill, sweet, bread and butter, homemade, store-bought. Just make sure they’re whole and not pre-cut. Try to use ones that are straight and not crooked.
- Ham – Use any deli ham you like. Smoked, honey, maple, peppered, etc. If getting it from the deli counter, make sure they slice it thin.
- Everything bagel seasoning – Optional but I like to sprinkle half of the dill pickle roll ups with some everything bagel seasoning.
Dill Pickle Roll Up Variations
There are a lot of different possibilities for making redneck sushi. Here are a few easy variations to try:
- Use different deli meat. Try turkey or roast beef instead of the ham.
- Add more cheese. Sprinkle some shredded cheese on top of the cream cheese.
- Add some ranch flavor. Instead of the flavored cream cheese, use an 8 ounce brick of softened cream cheese and blend it with 2 tablespoons ranch seasoning.
- Turn them into tortilla rollups. Use small flour tortillas as the base to wrap up the meat, cream cheese, and pickles.
How to Make Ham Pickle Roll Ups
Here’s how to make these ham and pickle roll ups in just a few minutes.

- Dry the ingredients. Pat both the ham slices and pickles completely dry with paper towels.
- Spread the cream cheese on the ham. Spread about 1 & 1/2 tablespoons on each slice of ham, making sure to cover them all the way to the edges.
- Add the pickle. Trim the ends from the pickles, then set each one on top of the cream cheese on a ham slice. Very tightly roll each pickle in the ham.
- Cut. Cut each ham and pickle roll up into 3/4-inch pieces. If desired, sprinkle with everything bagel seasoning. Place on a plate or platter.
- Chill or serve. Serve immediately or cover the plate of dill pickle roll ups with plastic wrap and refrigerate until serving.
Tips for Success
Here are a few tips for this easy appetizer recipe.
- Be sure to remove excess moisture. Don’t skip the step of drying the ham and pickles. If left with moisture, the rolls won’t stay together as well plus they’ll get soggy and messy quickly.
- Make sure the cream cheese is room temperature. If the cream cheese is too cold, it will be harder to spread and may tear the ham.
- Use toothpicks if needed. If you notice they aren’t staying rolled, you can use toothpicks to hold it together.
- You may end up with a different number of slices. Measurements are a guide depending on the size of your ham slices and pickles, and how thick you cut the pieces. You can get more or less than I got.
What to Serve with Ham and Pickle Roll Ups
These dill pickle roll-ups make a great low carb appetizer. You can create a fun party appetizer spread with other low carb recipes like mozzarella pizza chips, dill pickle cheddar chips, and bacon-wrapped jalapeno peppers. Salmon dip is a family favorite too.
You could also serve these as a side dish with burgers and hot dogs or just enjoy them as an afternoon snack as well.
Make Ahead and Storing Leftovers
- Make in advance. Ham pickle roll ups can be made several hours ahead if needed. Store them in the fridge in an airtight container. If it’s going to be more than an hour or so, I recommend assembling them, but slicing them into pieces closer to serving time, just to prevent the pickle juices from leaking out.
- Storing leftovers. Any leftovers should be covered with plastic wrap or placed in an airtight container in the fridge. I recommend eating them within a day, as the pickle juice will leak out and they can get messy.

Ham Pickle Roll Ups
Ingredients
- 12 ounces whipped chive and onion cream cheese (or garlic and herb), room temperature
- 16 whole dill pickles
- 16 thin slices deli ham
- Everything bagel seasoning , for garnish and flavor, optional
Instructions
- Using paper towels, pat all the ham slices and pickles completely dry.
- Set ham out on a clean work surface in a single layer. Spread the cream cheese evenly over the slices of ham (about 1 & 1/2 tablespoons each), making sure to cover them completely all the way to the edges.
- Trim the ends off the pickles and set one on top of the cream cheese.
- Very tightly roll each pickle up in the ham (use toothpicks to secure them, if needed.)
- Cut the ham rolls into 3/4-inch pieces. Sprinkle with everything bagel seasoning, if desired.
- Place the pieces on a plate or platter, serve and enjoy!
