These freezer breakfast sandwiches are the best busy morning breakfast hack. They last for months in the freezer, so you can make a big batch when you have the time, then just pop them in the microwave on a busy morning for a quick breakfast on the go.
I always try to make at least one batch of these before school starts, as the kids love them and so do I. It means I don’t need to cook and the kids get something substantial in their bellies to start the day.
Plus, with eggs, breakfast meat, and cheese, these English muffin sandwiches are both filling and satisfying. They’re easy to customize too! I make ours with a variety of breakfast meats, like ham, bacon, and breakfast sausage, so there are always different options to choose from.

- Milk – I used 2% but any milk you prefer works.
- Salt and pepper
- English muffins – You could also use regular white bread, biscuits, or croissants.
- Butter
- Cheddar cheese – You’ll want sliced cheddar for this recipe. You can replace it with your preferred cheese too.
- Breakfast meat – You can use bacon, breakfast sausage, or ham.
How To Make Freezer Breakfast Sandwiches
These meal prep breakfast sandwiches are so easy to make, all you need is a little bit of time.

- Prepare the pan. Spray a rimmed half sheet pan with nonstick spray and line with parchment paper.
- Bake the eggs. Ever wondered how to make eggs for breakfast sandwiches? Bake them! Whisk the eggs, milk, salt, and pepper then pour into the prepared sheet pan. Bake at 350F for 18 to 22 minutes. Allow to cool. Use a round cookie cutter to cut out 12 circles.
- Broil the English muffins. Cut the English muffins in half, brush with the butter, and broil for 1-3 minutes until golden brown.
- Assemble the sandwiches. Place the egg rounds on the bottoms of the English muffins, top them with a slice of cheese and meat. Add the top.
- Freeze. Wrap each breakfast sandwich in parchment paper, then place it inside a large ziploc bag. Freeze for up to 3 months. When you’re ready to enjoy, just microwave for 3 minutes.
Recipe Tips & Variations
Here are a few tips and tricks for making the best make ahead breakfast sandwiches.
- How to prevent the eggs from sticking. To prevent the corners/edges of the parchment paper from sticking up, spray the sheet pan with a nonstick spray first, lay down the parchment, and run your finger or a rubber spatula over the parchment paper to help press it down – this will create a nice seal and prevent the eggs from going underneath.
- Can I just grease the pan? If not using parchment paper, you must ensure the sheet pan is greased very well.
- Can I bake the eggs in a casserole dish? If you don’t have a sheet pan with a rim, you can make these eggs in a casserole dish, but you will need to reduce the eggs from 16 down to 12, and you will get about nine sandwiches instead of 12 out of a 9 x 13 pan.
- Use liquid egg whites. You can use liquid egg whites instead of cracking eggs yourself. You will need about 1 & 1/2 cups of egg whites.
- Customize the ingredients. Beyond using only egg whites, you can also customize these freezer breakfast sandwiches however you want. Use a different bread than English muffins, omit the meat completely, swap the cheese, etc.
Serving Suggestions
You can heat these breakfast sandwiches straight from the freezer – no need to thaw them first! Just pop them in the microwave for 3 minutes or so, until heated completely, and enjoy. Perfect for those busy mornings when you don’t have much time to sit and eat, let alone cook.
These are also one of my favorite meals for camping because you make them up ahead of time. Instead of wrapping them in parchment paper, you wrap them in aluminum foil and warm them over the fire. The sandwiches will thaw as they are sitting in your cooler.
How To Store Meal Prep Breakfast Sandwiches
- Freezer. As noted in the directions, wrap each sandwich in parchment paper then place them in a freezer-safe ziploc bag and freeze for up to 3 months.
- Fridge. Don’t want to freeze them? These can be made and enjoyed right away or you can store them in your refrigerator for up to 4 days.
- Reheat. From the fridge, warm them up in the microwave for about one minute. From the freezer, they’ll need about 3 minutes in the microwave. If you want to warm them up in the oven or toaster oven, place them in a 350° oven for 10-15 minutes.

Freezer Breakfast Sandwiches
Ingredients
- 16 large eggs
- 1/4 cup whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 12 English muffins , split
- 3 tablespoons butter , melted
- 12 slices cheddar cheese
- 12 slices cooked breakfast meat (bacon, sausage patties, or ham)
Instructions
- Preheat oven to 350°F. Spray a rimmed half sheet pan (17×12.9) with nonstick spray and line it with a sheet of parchment paper.
- Whisk the eggs, milk, salt, and pepper in a large mixing bowl. Pour the mixture onto the sheet pan. Bake for 18-22 minutes until the eggs are set. Allow the eggs to cool.
- Using a round cookie cutter approximately the same size as the English muffins, cut out 12 circles.
- Cut the English muffins in half and place them onto a sheet pan. Brush the muffin with the butter. Place them under the broiler for 1-3 minutes until golden brown.
- Place the egg rounds onto the bottoms of the English muffins. Top the egg with a slice of cheese and a slice of meat. Place the top of the muffin onto each sandwich.
- Wrap each sandwich in parchment paper and place them inside a large freezer-safe Ziploc bag, then transfer the sandwiches to the freezer.
- When you want to cook your frozen sandwich, microwave for 3 minutes until the sandwich is warmed.
