Nothing says summer BBQ like potato salad! Whether it’s classic potato salad, sweet potato salad, French potato salad, or my new favorite – this crispy potato salad made with tater tots! Coated in a creamy, tangy dill pickle dressing (another thing my family loves!), this salad is amazing.
Tips & Variations
- Use mini tater tots. I highly recommend mini tater tots over regular tater tots for this salad. Once baked and flattened, they stay crispy and bite sized. But larger ones certainly work fine, too.
- Fresh dill is a must. The chopped fresh dill adds so much flavor to the dressing and really elevates the dish. It adds a brighter flavor than dried dill.
- Make sure the tater tots are crispy. Smashing the tater tots then popping them back in the oven is the key to achieving the crispy texture. Make sure to leave plenty of space in between them, so the edges get crispy too.
- Skip the bacon, if preferred. For a vegetarian tater tot salad, simply omit the bacon!
Dill Pickle Tater Tot Salad

Ingredients
- 28 ounce bag frozen MINI tater tots
- 1/2 cup mayonnaise
- 3 tablespoons plain Greek yogurt
- juice from 1 lemon
- 2 tablespoons dill pickle juice
- 2 tablespoons chopped fresh dill
- 1 teaspoon dijon mustard
- 1 teaspoon coarse salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon crushed red pepper flakes
- 1 small Persian cucumber, , finely diced
- 2 large dill pickles, , finely diced
- 1/3 cup finely diced red onion
- 5 pieces bacon, , cooked crispy, crumbled
- 2 scallions, , finely diced
Instructions
- Preheat oven to 425F.
- Place the bag of tater tots on an extra large nonstick baking sheet and spread them out so there's space in between (or use 2 baking sheets.) Transfer to the oven and bake for 10 minutes, then remove from the oven. Use a cup to press down on the tater tots so they're flat.
- Return the flattened tater tots to the oven and bake another 15 minutes, or until deep golden brown and crispy. Remove from oven and set aside, then separate any if stuck together.
- In a large bowl, add 1/2 cup mayonnaise, 3 tablespoons plain Greek yogurt, lemon juice, 2 tablespoons each dill pickle juice and chopped fresh dill, 1 teaspoon each dijon mustard and coarse salt, 1/2 teaspoon each garlic powder, onion powder, black pepper, and 1/4 teaspoon each paprika and red pepper flakes. Whisk to incorporate.
- To the dressing, add 1 finely diced Persian cucumber, 2 large finely diced dill pickles, 1/3 cup finely diced red onion, 5 cooked and crumbled bacon strips, 2 diced scallions, and crispy flattened tater tots.
- Gently toss to evenly coat everything.
- This best served right away while the tater tots are still crispy, but it's still good soft, like traditional potato salad. Proper storage is included below in the article. Enjoy!

Serving Suggestions
Dill pickle tater tot salad is a great option for summer BBQs and picnics. Just be prepared for lots of comments and requests for the recipe! I also make it as a side dish when we grill at home. It’s so good with grilled chicken breasts and grilled flank steak!
How To Store Tater Tot Salad
Dill pickle tater tot salad is best enjoyed within a couple hours of making it. However, leftovers can be stored in an airtight container in the fridge for a day or two. Just keep in mind that the tater tots won’t be as crispy after sitting in the dressing for a while, but they’re still really good soft, just like traditional potato salad.
