If you’re familiar with our fried pickles, dill pickle cheddar chips, and dill pickle dip, you know we’re pretty big fans of dill pickles around here! I even add dill pickles to my chicken salad.
So it should be no surprise that I also added it to my coleslaw to make this dill pickle coleslaw. It’s crunchy and tangy, with a creamy dressing. With shredded pickles in the slaw and dill pickle juice in the dressing, every bite of this is full of pickle flavor.
This pairs so well with ribs, burgers, and other grilled meats but we especially love it on crispy chicken sandwiches and with BBQ pulled chicken. So good!

- Prepare the dressing. Whisk together all of the dressing ingredients. Taste test and adjust the seasonings as needed.
- Combine the ingredients. Add the cabbage, carrots, pickles, and onions to the bowl. Toss to coat.
- Chill. Chill the pickle coleslaw for at least an hour before serving.

Make Ahead and Storing Leftovers
- Make in advance. I highly recommend preparing your dill pickle coleslaw at least a few hours in advance, to give the flavors time to meld. It will taste good after one hour but even better after three or four. You can also prepare the coleslaw a day or two in advance, with no problem. Just keep it covered in the fridge.
- Storing leftovers. This dill pickle coleslaw can be stored in the fridge for up to 4 days. Just be sure to keep it in an airtight container and give it a good stir before serving again.

Dill Pickle Slaw
Ingredients
DRESSING
- 1/2 cup mayonnaise
- 1/4 cup dill pickle juice
- 2 teaspoons granulated sugar
- 2 teaspoons fresh chopped dill
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon celery seed
SLAW
- 5 cups packed shredded green cabbage (about 1/2 a head cabbage)
- 1 small carrot , peeled and shredded
- 1/2 cup shredded dill pickle (or finely diced)
- 1/2 cup shredded sweet onion (or finely diced)
Instructions
- In a mixing bowl, whisk together all the dressing ingredients until combined. Taste and adjust seasoning, if desired.
- Add in the cabbage, carrots, pickles, and onion. Toss everything to evenly coat.
- Cover and chill for at least 1 hour before serving.
