I love taking classic recipes and adding my own twist to them, whether that’s adding a new flavor or trying a new cooking method. With this crockpot bananas foster recipe, it’s both.
I swapped the stovetop for the crockpot, which makes it a pretty hands-off dessert, and added some new flavors like pineapple and coconut. The end result is pretty fantastic and it’s so simple to make.

- Bananas – You’ll want firm yellow bananas, without brown spots.
- Pineapple tidbits – Drained.
- Butter – Adds a rich flavor to the sauce.

How To Make Crockpot Bananas Foster With Pineapple
This dessert is relatively hands-off, which is one of the reasons I like it so much.

- Layer the bananas and pineapple. Spray the crockpot with nonstick spray. Cut the bananas in half lengthwise then crosswise. Place half on the bottom of the crockpot then top with half of the pineapple. Repeat.
- Add the butter sauce. Combine the butter, sugar, cinnamon, rum, vanilla, and walnuts. Pour over the bananas.
- Cook. Cook on low for 1 & 1/2 to 2 hours, until the ingredients are heated through.
- Serve. Scoop into bowls with vanilla ice cream, wafer cookies, and top with toasted coconut flakes.
Tips & Variations
- No brown bananas. Use firm bananas that are not quite ripe (no brown spots at all), or they’ll turn to mush.
- Skip the pineapple. If you hate pineapple, just leave it out for a more traditional bananas foster taste.
- Swap the nuts. Feel free to change out the walnuts with pecans or macadamia nuts.
- Omit the rum. The alcohol cooks off and lends more flavor to the dessert, but you can simply omit it, if preferred.
- How do I know when it’s done? Basically all you’re doing here is heating the ingredients through, which takes anywhere from 90 minutes to 2 hours depending on the size of your crockpot. Once everything is heated to your liking, it’s ready!
Serving Suggestions
Bananas foster is typically served warm with a scoop of vanilla ice cream. For this pineapple bananas foster, I like to take it up a notch and serve it with cream filled wafer cookies and toasted coconut flakes as well.
Proper Storage
Bananas foster is best served fresh, but leftovers can be stored in an airtight container in the fridge for up to 2 days after it’s made. To reheat, place individual servings into the microwave for 25-30 seconds at a time until warmed through. I don’t recommend freezing this dessert.

Ingredients
- 4 medium firm bananas
- 8 ounce can pineapple tidbits , drained
- 1/4 cup butter , melted
- 1 cup packed brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup spiced or dark rum
- 1 teaspoon vanilla extract
- 1/3 cup toasted chopped walnuts
- 1/2 cup sweetened shredded coconut , toasted
- vanilla ice cream , for serving
- Cream filled wafer cookies , for serving
Instructions
- Coat a 5 quart crockpot with nonstick spray.
- Cut bananas in half lengthwise, then again crosswise. Place half of the banana slices in the bottom of the crockpot, followed by half of the pineapple. Repeat layers one more time.
- In a small bowl, combine melted butter, brown sugar, cinnamon, rum, vanilla, and chopped walnuts; pour over the bananas and pineapple.
- Cover and cook on low until heated through, 1 & 1/2 to 2 hours.
