4mediumfirm bananas
8ouncecan pineapple tidbits, drained
1/4cupbutter, melted
1cuppacked brown sugar
1/2teaspooncinnamon
1/4cupspiced or dark rum
1teaspoonvanilla extract
1/3cuptoasted chopped walnuts
1/2cupsweetened shredded coconut, toasted
vanilla ice cream, for serving

Instructions
Coat a 5 quart crockpot with nonstick spray.
Cut bananas in half lengthwise, then again crosswise. Place half of the banana slices in the bottom of the crockpot, followed by half of the pineapple. Repeat layers one more time.
In a small bowl, combine melted butter, brown sugar, cinnamon, rum, vanilla, and chopped walnuts; pour over the bananas and pineapple.
Cover and cook on low until heated through, 1 & 1/2 to 2 hours.
Portion into bowls with a scoop of vanilla ice cream, cream filled wafer cookies, and sprinkle with toasted coconut flakes.
Notes
No brown bananas. Use firm bananas that are not quite ripe (no brown spots at all), or they’ll turn to mush.Skip the pineapple. If you hate pineapple, just leave it out for a more traditional bananas foster taste.Swap the nuts. Feel free to change out the walnuts with pecans or macadamia nuts.Omit the rum. The alcohol cooks off and lends more flavor to the dessert, but you can simply omit it, if preferred.
