But the best part is thereโ€™s no need to pre-cook the cabbage at all. It bakes right in with the onions, while a creamy, savory sauce melts down into the veggies. Then itโ€™s topped with buttery Ritz crackers for a golden crunch and finished with a melty layer of cheese. Helpful Tips & Variations

  • Use green cabbage for the best texture. I stick with a small head of green cabbage (about 1ยฝ-2 lbs) because it holds up really well as it bakes. No mushy cabbage here, thank you! You can swap in pre-shredded cabbage to save a little time, but Iโ€™d still chop it into bite-sized pieces for easy eating, and note that it will end up much softer.
  • Use a different soup. I prefer using cream of chicken for this recipe, but cream of mushroom or celery are great swaps and would make the dish vegetarian.
  • Cover if it browns too fast. If the cracker topping is getting dark before the cabbage is tender, I loosely tent it with foil for the last 10 minutes before adding the cheese.
  • Hand shred cheese for the best melt & flavor. Pre-shredded cheese is coated with anti-caking additives, which can keep it from melting as smoothly. Freshly shredded cheese from a block has a much better melt and just tastes better.
  • Make it extra cheesy. Add an extra ยฝ cup shredded cheese to the creamy sauce mixture. Then finish the casserole with the full cup of cheese sprinkled on top!
  • Use a different cheese. Any good melty cheese works in this Southern cabbage casserole, like cheddar, Monterey Jack, mozzarella, provolone, pepper jack (if you like a little kick), or a mild Swiss.

Ingredients 

  • 1ยฝ-2 pound head green cabbage, cored and roughly chopped into bite-sized pieces
  • 1 large yellow onion, roughly chopped into bite-sized pieces
  • 10.5 oz. can cream of chicken soup
  • 1 cup mayonnaise
  • 1 tsp coarse salt
  • 1 tsp pepper
  • ยผ tsp garlic powder
  • 2 cups crushed Ritz crackers
  • ยผ cup salted butter, melted
  • 1 cup shredded Colby Jack cheese

Instructions 

  • Preheat oven to 350ยฐF and grease a 9×13-inch casserole dish.
  • Add the cabbage and onion to your casserole dish.
  • In a small mixing bowl, stir together the cream of chicken soup, mayonnaise, salt, pepper, and garlic powder. Spoon the mixture over the cabbage.
  • Combine the Ritz crackers and melted butter in a medium mixing bowl. Sprinkle the cracker mixture over the casserole.
  • Bake uncovered for 35 minutes. (Tent with foil toward the last 10 minutes if you notice it over-browning.)
  • Sprinkle the cheese evenly over the top. Bake for an additional 5 to 10 minutes until the cheese is melted, and the cabbage is tender.

Gather all of your ingredients: Gather your ingredients. Preheat your oven to 350ยฐF and grease a 9×13-inch casserole dish.

Assemble the veggies: Add 1 small green cabbage (cored and roughly chopped) and 1 roughly chopped large yellow onion to your prepared casserole dish.

Add the creamy sauce: Mix together a 10.5 oz. can cream of chicken soup, 1 cup mayonnaise, 1 teaspoon coarse salt, 1 teaspoon pepper, and ยผ teaspoon garlic powder in a small bowl. Spoon the soup mixture over the cabbage and onions. Thereโ€™s no need to mix it in.

This easy cabbage casserole is one of those side dishes that goes with just about anything. I usually serve it with something simple but delicious, like fried or baked chicken breast, pulled pork, or a classic meatloaf on a weeknight. Itโ€™s also great next to honey glazed ham, especially around the holidays, and it plays really well with simple staples like mashed potatoes or green beans.

How to Store

  • Fridge. Store leftovers in an airtight container in the fridge for up to 3-4 days. (I don’t recommend freezing, since the cabbage and the cracker topping will become much softer after thawing, and the sauce may separate.)
  • Reheat. Warm leftovers in the microwave or warm in the oven at 325ยฐF until heated through. If frozen, I recommend thawing it overnight in the fridge before reheating.
  • Make ahead. To make ahead, assemble the casserole minus the Ritz cracker and shredded cheese topping, cover it, and refrigerate for up to 24 hours. When youโ€™re ready to bake, let it sit out while the oven preheats so it can come closer to room temperature, then add the toppings and bake as directed.
