This black forest sundae was inspired by black forest ice cream. It’s made with chocolate ice cream, brownies, chopped dark chocolate, and cherries and wow, it is GOOD! If you love black forest cake and ice cream, you’ll love this brownie sundae.
I actually love making this black forest sundae as a way to use up leftover brownies or chocolate cake. But you can use freshly baked homemade brownies, brownies from a box mix, or even packaged brownies from the store. Whatever you have on hand works!
This decadent, indulgent ice cream sundae is an easy and wonderful treat for any occasion and definitely perfect during the summer.

Black forest is an ice cream flavor (and cake) made with chocolate ice cream, cherries, and typically pieces of chocolate or brownies. A black forest sundae is simply an ice cream sundae made with those elements – chocolate ice cream, cherries, and chocolate brownies.

- Cherry preserves – The base of the sweet but tart cherry sauce.
- Frozen cherries – Frozen cherries are more tart than the preserves, so combined they offer a great sweet but tart cherry flavor.
- Chocolate ice cream – Any brand you love will work here.
- Brownies – You can also use chocolate cake.
- Dark chocolate – Use a quality brand for the best flavor, like Ghiradelli.
- Whipped cream & cherries – Garnishes for the ice cream sundae.
How to Make a Black Forest Sundae
This recipe makes 3 ice cream sundaes. Here’s how to assemble your decadent black forest sundae.

- Make the cherry mixture. Add the preserves and thawed frozen cherries into a mixing bowl. Mash the cherries into the preserves to form a sauce.
- Build the brownie sundae. Add a scoop of ice cream to a glass or dessert cup, followed by some of the cherry mixture, some brownies, and chopped chocolate. Top with whipped cream, a cherry, and a brownie chunk.
- Repeat. For your second and third sundae, simply repeat the process. Enjoy immediately!
Tips & Variations
Here are a few tips and variations for making your ice cream sundae.
- Can I use just brownie ice cream? While you can use brownie ice cream to avoid making actual brownies, it’s not my preference. I love the texture of having whole pieces of brownies in the sundae.
- Can I use jarred cherries? I don’t recommend using jarred cherries in lieu of the frozen ones. As the frozen cherries melt, they will give you juice that will help make the sauce. The thawed frozen cherries are not as sweet as the jarred cherries.
- Use your favorite ice cream. I love regular chocolate for this recipe but feel free to customize your ice cream sundae with any ice cream. If you’re not a huge chocolate person, vanilla will work too!
Serving Suggestions
You’ll want to enjoy your sundae immediately after preparing it. I like to top mine with whipped cream, an extra cherry, and another brownie.
Note that this recipe makes three single layer sundaes. If you want pretty big, multi-layer ice cream sundaes, simply divide the ingredients between two large glasses and double the layers.

Ingredients
- 1/4 cup cherry preserves
- 1/2 cup frozen cherries , thawed
- 3 cups chocolate ice cream
- 1 cup cubed brownies (or chocolate cake)
- 1/4 cup dark chocolate , chopped
- whipped cream , garnish
- cherries , garnish
Instructions
- Place the cherry preserves and cherries into a small mixing bowl. Using a fork, mash the cherries into the preserves.
- To 3 glasses or dessert cups, add one scoop of ice cream. Top the ice cream with some of the cherry mixture, brownies, and chopped chocolate.
- Garnish with whipped cream, a couple cherries, and a brownie chunk. Serve immediately and enjoy!
