How is it already time to start thinking about school lunches again??! *cries*
We’re loving summer and not quite ready for the onslaught of homework and lugging backpacks in the morning. But alas, we’ve only got a couple weeks left. So, I might as well work on something to get everyone excited about it.
I came up with some more fun ideas to get your kid interested in lunch. Or at least stay seated more than 5 minutes before they bolt for the playground!
Vegetable, Bread, and Kielbasa Fondue
This is perfect for the kid who’s not really into sandwiches, but loves finger food and dipping! Shown are toasted bread cubes, celery, carrots, fully cooked kielbasa, with Thousand Island dressing. Mix it up with some Ranch instead, cucumbers, and bell peppers.
Inside-Out Sandwiches with Apple Slices and Trail Mix
This is ideal if you’ve got two lunches to prepare. Make the same sandwich, one on white bread and the other wheat. Then using a small cookie cutter, cut out a shape from the center and swap them! The trail mix includes, cheese and pretzel fish crackers, regular M&Ms, and raisins.
Corn Dog Muffins with Cheese Wands and Clementines
I just follow the directions on the Jiffy Corn Mix box and put a 1/3 of a hot dog slice on top before baking. Do this the night before and then just heat up in the morning. Buy a block of cheese, cut into cubes, and poke a piece of a pretzel stick in the center. Include your favorite fruit. My kids love the seedless Cuties!
Do you get all of your cool divided lunch containers at Target? I am Lunch Crushing on all of them – plus, they look lighter & easier to clean than our yumbox…
Hi Rachel! I got some of them at Target a few years ago and love them, but I haven’t spotted them there anymore. The bento box that features the taco, pizza, and sushi I bought on Amazon. Love them, too!

These are great ideas – especially the non-sandwich ones. I don’t love sandwiches myself, and I see so many discarded ones when I’m walking the dog around the elementary school. Better to give them something they will want to eat.

I have not seen those at Target. I need to look again. I miss the Ziploc containers. I have never found one as good as they were.

These back-to-school lunches look sophisticated, uncommon, attractive, and delicious! We don’t have any kids left in our family; even our grandsons are up in age now, but I believe these lunches would work well for upper teens and adults, too, including us seniors.
