Is there anything that defines comfort food more than chicken noodle soup? Other than chocolate chip cookies and pot roast, I say not really. This homemade chicken noodle soup recipe, along with my chicken and rice soup, are my go-tos when a family member is sick, I need something quick and easy for dinner, or I just want to curl up with a warm bowl of love.

Using pantry staples, this easy chicken soup is a gift when you’re in a pinch for something fast that satisfies. Just because it’s quick and easy, though, doesn’t mean it skimps on flavor. It’s the absolute perfect blend of simple ingredients, delivering on both taste and texture. It’s got the perfect ratio of chicken to noodles to broth. It’s so good!!

Recipe Notes

  • Chicken. Seasoned, cooked chicken breast, shredded or chopped. You can make your own baked chicken breast or use rotisserie chicken.
  • Liquid. Low-sodium chicken broth or stock, store-bought or homemade all work. Store bought is great for ease and convenience, although I do love my homemade chicken stock recipe.
  • Egg noodles. I always make chicken noodle soup with egg noodles. Grew up eating it that way and I’ll die eating it that way. But you can use a different pasta if you prefer.

Homemade Chicken Noodle Soup

This Homemade Chicken Noodle Soup recipe is wonderfully quick and easy, made from scratch with pantry staples. It’s classic comfort food in a bowl!

Ingredients 

  • 2 tablespoons butter
  • 1 medium sweet onion, , diced small
  • 2 stalks celery, , diced small
  • 2 medium carrots, , peeled and sliced
  • 2 cloves garlic, , minced
  • 1 & 1/2 teaspoons kosher salt, , divided
  • 48 ounces low-sodium chicken broth
  • 2 teaspoons dried Italian seasoning
  • 1/4 teaspoon black pepper
  • 2 & 1/4 cups dried egg noodles
  • 1/2 pound (about 1 cup) shredded or chopped cooked, seasoned chicken breast

Instructions 

  • In a large pot over medium heat, melt the butter. Add in the onion, celery, carrots, and 1/4 teaspoon of the salt; sauté, stirring occasionally, until softened, about 5 minutes. Add in the garlic and cook until fragrant, 30-60 seconds.
  • Pour in the broth, Italian seasoning, pepper, and remaining 1 & 1/4 teaspoons of salt. Bring to a boil, then reduce heat and gently simmer for 10 minutes.
  • Add in the noodles and simmer, stirring occasionally, until tender, about 8-10 minutes.
  • Stir in the chicken and heat through.
  • Ladle into bowls and enjoy!

What Goes with Chicken Noodle Soup?

To me, this soup is substantial all on its own, but sometimes I’ll serve it with popovers or focaccia. You can also top it with a few oyster crackers.

How to Store Leftovers

  • To store in the refrigerator: Cool completely, then transfer to an airtight container and store in the refrigerator for up to 3 days. NOTE: soup will thicken as it stands and noodles will absorb a lot of the broth. When reheating, thin the soup a bit with some broth.
  • Can you freeze chicken noodle soup? Chicken noodle soup freezes very well without the noodles, which get super mushy and sort of gross once defrosted. I recommend omitting the noodles and cooking up a fresh batch after the soup has thawed. Transfer cooled soup to airtight container, removing as mush air as possible, and store in the freezer for up to 3 months. Thaw in the fridge overnight and reheat in the microwave or stovetop and adding in a fresh batch of cooked noodles.

It was delicious! But minor question: Is there a reason why we have to simmer for 10 minutes, then simmer for another 10 minutes to cook the noodles? Can we just cook the noodles for the first 10mins then skip the last 10 minutes? Just curious.

Yes. Easy enough to make it often. Delicious. I use no yolk noodles to keep the cholesterol low.

I made this when I started coming down with a cold. I had a horrible time with sneezing like I have before plus my nose was running bad where I was constantly blowing my nose. This recipe is oh so good!! I’ve made it a few times, now. We stay away from salt for health reasons; so there’s a bit more of what’s called for, and then some other seasonings. I like to add a dried, oregano/thyme mixture from the garden.

I made this amazing chicken noodle recipe today. I did one thing differently than the recipe called for…I sautéed the veggies in my drippings from the roasted chicken. This provided a broth that was so rich and flavorful that it melted in my mouth! I think it honestly was the best soup I’ve ever tasted! Thank you for an amazing recipe! Bad news-my son dropped the container onto my fridge ledge! We quickly salvaged as much as we could! I will make this again next weekend! Totally the best soup ever!

I made this soup today, exactly as the recipe states, except I added about 1.5 cups of chicken. It has to be the best chicken noodle soup I’ve made in my life! I boiled the chicken breast and shredded it a few hours before I put everything else together. Absolutely delicious, and so easy to make. Thank you for the recipe!

I doubled the recipe. This soup was delicious and flavorful. Sauteing the vegetables in the butter gave it flavor and pan cooking seasoned chicken breast in a little oil gave it a nice flavor. I did add bullion cubes and water to the chicken broth to give more broth. You just combine everything together. I will be making it this way from now on. Thank you for the inspiration. Family loved it.

Great recipe! I followed the recipe (made double for my family so we would have leftovers). The only difference is I cooked the egg noodles and kept them separate so they wouldn’t get mushy in the soup (you just add the noodles to each bowl when you serve it). I also used a little more chicken, carrots and celery than the recipe called for, just eyeballed it. Thank you!

It turned out great, I added broccoli and corn on the cob to the recipe and it was very tasty. I also used spanish noodles instead of egg noodles.

Absolutely delicious. I added a bit of flour to the butter for sort of a roux, and I used a 12 oz package of egg noodles cause I didn’t feel like measuring (wayyyy too much, oops). I added more stock as well. Very very good highly recommend.

Made this for grandkids (who had never had it) and my granddaughter ate it for breakfast, lunch, and dinner. I went back to visit them a couple of months later and she refused to eat for 1 1/2 days until I’d made it again! I do make my broth from scratch.

I feel like my egg noodles got really mushy like they didn’t hold up? How can I prevent this for next time? Other than that the recipe is delicious!!
