These baked wings don’t need a dipping sauce, but our homemade Tzatziki Sauce is a nice touch!
Oven Baked Chicken Wings Recipe
You can never go wrong with baked chicken wings! Fairly inexpensive, meat that pulls right off the bone, and totally delicious. These are game day food at its best.
These particular chicken wings are not like the ones deep fried and crispy you get at a bar, though. Instead they are roasted in the oven and basted in a Caribbean jerk-pineapple sauce. It’s a flavor explosion of sweet, salty, and a little spicy!

For the Wings
- Chicken – You’l be using wingettes or drumettes for this recipe, washed and patted dry.
- Seasonings – Coarse salt and black pepper season the chicken.
For the Glaze
- Pineapple preserves – You can find this next to the jellies and jams at the grocery store.
- Barbecue sauce – Use our homemade BBQ sauce or your favorite brand.
- Molasses – Provides a warm, sweet, somewhat smoky flavor.
- Distilled white vinegar – Adds some tang.
- Water
- Jerk seasoning – The flavors in this seasoning are deep and complex. See note below.
- Soy sauce – I use low sodium soy sauce to keep the saltiness in check.
- Grated ginger – Adds a slightly peppery, spicy aroma.
- Sriracha hot sauce – For some heat.
- Coarse salt – For flavor.
What is in Jerk Seasoning?
The ingredients in jerk seasoning are piquant and aromatic spices including allspice, cinnamon, thyme, cayenne pepper, ginger, paprika, and brown sugar. It’s not a combination that many people would think to pair together, but they do work wonderfully. A great union of spicy and subtle sweetness.
How To Make Baked Chicken Wings
This recipe starts with chicken wings which are seasoned with a little salt and pepper. The wings go onto a baking sheet in a single layer, then are baked at high heat. While they bake, you’ll make the jerk-pineapple glaze, which gets basted on the wings in 10 minute intervals until the chicken is cooked through. The chicken skin gets caramelized in the oven and are completely irresistible.

Recipe Tips for Success
- Using a paper towel, pat the wings dry before baking. This helps with browning and crisping as they cook.
- Reserve some of the sauce before you start basting, so the sauce you use at the end hasn’t touched raw chicken.
- Don’t crowd the pan. Leave enough space in-between each wing, so air can circulate around them for even cooking.
- How long to bake chicken wings? These wings take 35 to 40 minutes to cook at 450F or until the internal temperature registers 170F.

How many people does 1 pound of wings feed? 1 pound of wings typically results in about 7-8 pieces (depending on their size), so this recipe should feed approximately 7-8 people at 4 pieces per person.
These baked wings are delicious on their own, but if you want a dipping sauce, our my homemade Tzatziki Sauce pairs nicely with them. If serving as a meal, they go great with Cucumber Tomato Salad, Three-Bean Salad, or Garlic Bread. Have a lot of napkins at the ready because these are messy. In the best possible way!
Proper Storage
- Storing leftovers. Chicken wings are best enjoyed right from the oven, enjoyed fresh. If you do have leftovers, store cooked wings in an airtight container in the refrigerator, they will keep up to 4 days.
- Reheat. To reheat the wings, place them on a greased baking sheet in a single layer and bake in the oven at 400°F for 10-15 minutes.
- Make the sauce ahead of time. The sauce can be made up to 5 days ahead of time, cooled completely, then stored in tightly sealed container in the refrigerator.

Caribbean Baked Chicken Wings
Ingredients
For the Wings
- 4 pounds chicken wingettes/drumettes , washed and patted dry
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
For the Glaze
- 1/2 cup pineapple preserves
- 1/3 cup distilled white vinegar
- 1/4 cup water
- 2 tablespoons barbecue sauce
- 2 tablespoons molasses
- 2 teaspoons jerk seasoning
- 2 teaspoons soy sauce
- 2 teaspoons grated ginger
- 1 teaspoon Sriracha hot sauce
- 1/8 teaspoon kosher salt
Instructions
- Preheat oven to 450 degrees F. Line two baking sheets with foil, then coat with nonstick cooking spray.
- Toss the chicken wings with the salt and pepper and spread on the baking sheets in a single layer.
- Transfer to the oven and cook for 15 minutes.
- In the meantime, make the glaze: Put all the ingredients for the glaze in a medium pot. Bring to a boil, then reduce heat to a simmer and cook until thickened, stirring occasionally, about 10 minutes. Take off the heat, reserving about 1/4 cup for basting.
- Briefly remove chicken from the oven and baste each piece with some of the glaze.
- Return to the oven for another 10 minutes.
- Remove from oven and baste again. Return to the oven for another 10 minutes (or until the internal temperature registers at least 170 degrees F. Wings should cook for a total of 35-40 minutes and meat should easily come off the bone.)
- Toss cooked wings with the remaining glaze in a large bowl; transfer to a platter and serve hot or at room temperature.NOTE: 1 pound of wings typically results in about 7-8 pieces (depending on their size), so this recipe should feed approximately 7-8 people at 4 pieces per person.
