Easy SPAM Sandwich Recipe

It wasn’t until I was in my late 40’s until I actually tried SPAM. I heard about this breakfast sandwich served at a restaurant called Eggslut in Los Angeles – never ever one to resist an awesome breakfast sandwich, I got in the kitchen and made it that same day. And loved it.

SPAM is precooked canned meat – it’s really just blended ham. But we eat canned tuna and I love bologna, so it really isn’t that much of a stretch for us.

I’ve since made these sandwiches a bunch of times, and also fried up some chopped SPAM with scrambled eggs. It’s yummy. The regular SPAM is way too salty, though, so I use the low-sodium kind.

These SPAM breakfast sandwiches are easy, quick, and tasty. And I’m told a great cure for a hangover.

Ingredients Needed

This SPAM sandwich calls for just a few common ingredients.

  • SPAM – You’ll need one slice of SPAM per sandwich. I use the low-sodium variety since I think regular SPAM is too salty.
  • Oils – Both canola oil and olive oil are used to pan fry the SPAM.
  • EggScrambled egg, fried egg, or an omelet are all great on this breakfast sandwich, so cook it up however you prefer.
  • Salt and pepper – These season the egg.
  • Scallion – 1 scallion , cut into 3-inch pieces, then sliced thin lengthwise.
  • Mayonnaise and Sriracha – These two items are mixed together to make an awesome spread for the sandwich.
  • Hawaiian roll – Lightly toasted.

How to Make a SPAM Sandwich

Making this SPAM Sandwich takes just 15 minutes!

  1. Prep the scallions. Place scallions in a small bowl with very cold water to shock them. Let sit until you see them curl, then drain from water and pat dry.
  2. Make the sandwich spread. In a small bowl, whisk together the mayo and Sriracha until combined.
  3. Pan-fry the SPAM. In a medium skillet, heat both oils over medium-high. Once sizzling, carefully place SPAM in the pan; cook for about 2 minutes per side until crispy. Transfer to a towel-lined plate.
  4. Cook an egg. In the same pan, cook an egg to your preference.
  5. Assemble the sandwich. Spread the mayo-Sriracha mixture on both sides of the warmed roll. Place the fried SPAM, egg, and curled scallions on one half of the roll and top with the other half.

Serving Suggestions

These breakfast sandwiches are meant to be eaten fresh – I don’t recommend storing leftovers since the bun will get soggy. It only takes 15 minutes to make, so you can easily whip up another one anytime!

This is a great portable breakfast if you need something on-the-go. If sitting down to breakfast or brunch and want a more complete meal, you can serve with a hash brownsfruit salad, or a coffee banana smoothie.

Ingredients 

  • 1 scallion, , cut into 3-inch pieces, then sliced thin lengthwise
  • 2 tablespoons mayonnaise
  • 1/2 tablespoon Sriracha hot sauce
  • 1 tablespoon canola oil
  • 1 tablespoon olive oil
  • 1 slice low-sodium SPAM
  • 1 large egg, , fried, scrambled, or omelet folded, seasoned with salt and pepper
  • 1 Hawaiian roll, , lightly toasted

Instructions 

  • Place scallions in a small bowl with very cold water to shock them. Let sit until you see them curl, then drain from water and pat dry.
  • In a small bowl, whisk together the mayo and Sriracha until combined. Set aside.
  • In a medium skillet, heat both oils over medium-high. Once sizzling, carefully place SPAM in the pan; cook for about 2 minutes per side until crispy. Transfer to a towel-lined plate.
  • (In the same pan, cook an egg to your preference.)

    My family lived on the Islands for a few years and SPAM is big there. We like it. Everyone loved this sandwich!

    As a very young child , maybe 5-6 y.o., our family went through a really bad time . My Dad was very ill and couldn’t work. We lived in the country on a small farm, away from family, so the farm work was left to her and left little time for dinner preparation.. Many many nights we had fried spam sandwiches for dinner, spam “steaks” fried with sides of potato or other veggies from the garden. It was cheap, easy and filling and we thought it was yummy. Spam and S.O.S. were our go to dinners. I’m 65 so you know how those memories have hung on!!! BTW, I hadn’t eaten spam for many years until this sandwich!
