Homemade Root Beer Float Popsicles

One of the best gifts I ever received was a 12 bottle sampler of root beer from my friend, Michele. I’ll never forget it – they were all completely different, in packaging and flavor. I enjoyed every last drop.

It’s really my favorite soda, and yet I rarely ever buy it other than to use in something, like Root Beer Floats. And, in this case, Root Beer Float popsicles. How could I not?

Ingredients Needed

All you need to make these popsicles are just 2 ingredients – root beer and vanilla ice cream!

How to Make Root Beer Float Popsicles

If you’ve never made homemade popsicles, you should – it’s easy!

  1. Add ice cream. Place chunks of ice cream in each popsicle mold, working quickly before it melts.
  2. Poor in the root beer. Slowly pour the root beer into a corner of each mold, filling to the top.
  3. Freeze. Freeze for 1 hour, place sticks in the molds, and continue to freeze for at least 5 hours.
  4. Enjoy. To remove pops, run hot water over the outsides of the molds for a few seconds, then gently pull the sticks.

Tips for Success

  1. You need cold FLAT root beer. The carbonation will bubble up when pouring. Open a bottle and place it in the refrigerate a day before using.
  2. Filling the popsicle molds. This popsicle recipe was created using a standard bar-shaped mold, each holding about 1/3 cup. If you are using a different mold, you might need to adjust the ingredients.

Make Ahead and Storage

You can keep your homemade popsicles in the mold for a few days, which is perfect if you’re enjoying them as a regular summer treat. If you won’t be eating them all in a few days, it’s better to remove them from the mold and transfer them to reusable plastic freezer bags, or a plastic container. You can freeze them in multiple layers, but be sure to put parchment paper between each layer. These popsicles will stay fresh for a few weeks in the freezer.

  • 1 & 1/2 cups cold, flat root beer
  • 2 cups vanilla ice cream

Instructions 

  • Place chunks of ice cream in each popsicle mold, working quickly before it melts.
