  1. Simmer. Bring the pineapple juice and brown sugar to a gentle simmer, stirring frequently, until the sugar is completely dissolved.
  2. Thicken. Add the butter, cinnamon, and salt. Continue cooking until reduced and thickened.
  3. Add the rum. Stir in the rum and cook for an additional minute.

Tips for Success

  • Stir frequently. You’ll want to stir the mixture frequently as the sugar is dissolving to ensure that it doesn’t burn.
  • Don’t increase the heat. Similarly, you want just a gentle bubble – not a full boil. Having the heat too high can cause the rum sauce to burn.
  • Remove from heat after the rum. Cook the mixture with the rum for just an additional minute or so. Longer than that will cause the rum to cook off completely and you will lose some flavor.

Ingredients 

  • 3/4 cup pineapple juice
  • 1/2 cup packed brown sugar
  • 3 tablespoons butter
  • 1/4 teaspoon cinnamon
  • pinch of salt
  • 2 tablespoons dark rum, (see note)
  • grilled pineapple, , for serving
  • vanilla ice cream, , for serving

Instructions 

  • In a medium saucepan over medium heat, add the pineapple juice and brown sugar.
  • Bring to a gentle simmer, stirring, until the brown sugar is completely dissolved.
  • Add in the butter, cinnamon, and a pinch of salt. Continue cooking at a gentle bubble, stirring occasionally, until it’s reduced and thickened, about 5 minutes.
  • Stir in the rum and cook for 1 more minute.
  • Remove from the heat.
  • Spoon over grilled pineapple and a scoop of vanilla ice cream!
