Ingredients
3/4cuppineapple juice
1/2cuppacked brown sugar
3tablespoonsbutter
1/4teaspooncinnamon
pinchof salt
2tablespoonsdark rum(see note)
grilled pineapple, for serving
vanilla ice cream, for serving
Instructions
In a medium saucepan over medium heat, add the pineapple juice and brown sugar.
Bring to a gentle simmer, stirring, until the brown sugar is completely dissolved.
Add in the butter, cinnamon, and a pinch of salt. Continue cooking at a gentle bubble, stirring occasionally, until it's reduced and thickened, about 5 minutes.
Stir in the rum and cook for 1 more minute.
Remove from the heat.
Spoon over grilled pineapple and a scoop of vanilla ice cream!

Notes
What rum to use? I recommend using dark rum for this sauce, as it has much more of a warm, rich flavor than white rum. Spiced rum, such as Captain Morgan, is another option. If you use spiced rum, you can omit the cinnamon.
