If you love omelets for breakfast but find you don’t always have the time (or want to deal with the dirty dishes), this Just Crack an Egg copycat recipe is for you. It’s essentially a microwavable omelet in a jar, that can be customized in any way you want.
For me, that means keeping it classic with some onion, green pepper, ham, and cheddar cheese but I’ve provided tons of variation ideas below. Plus, you can even prep the ingredients in advance so that you can just stir it all together in the morning and microwave. A hearty, filling breakfast in under 5 minutes!
Helpful Tips & Variations
- Pre-cooked proteins. I include ham, but fully cooked ground turkey sausage, crumbled turkey bacon, plant-based meat alternatives, chicken sausage, or Canadian bacon are good alternatives.
- Potatoes. They should be pre-cooked and diced small. I love cooked and cut up tater tots!
- Veggies cut into very small pieces. Bell pepper, onion, broccoli, asparagus, zucchini, summer squash, cabbage, hot peppers, or baby spinach are great veggie choices. Just make sure they’re all cut into very small pieces.
- Freshly shredded cheese. Cheddar cheese, Mozzarella, smoked gouda, Colby Jack, Monterey Jack, or Swiss are all delicious options.
- Mayonnaise. It might sound strange, but I highly recommend! It adds moisture to the mixture and makes the eggs creamy and fluffy with a tiny bit of tanginess.
- What Type of Jar Should I Use? It is best to cook these in a clear jar/container. I use an 8 ounce clear glass mason jar so you can see the mixture, which helps you determine how much longer it needs to cook. If it is a light yellow color it is cooked, but if there are any darker yellow spots, that is uncooked egg and it needs to be microwaved for a few more seconds.
- Can I add 2 eggs? Yes, you can add two eggs if you want but make sure to use a 16-ounce jar instead. You’ll also need to cook it longer to ensure the egg fully cooks.
Just Crack an Egg {Denver Flavor}

Ingredients
- 2 tablespoons small diced cooked ham
- 2 tablespoons shredded sharp cheddar cheese
- 1 tablespoon small diced onion
- 1 tablespoon small diced green bell pepper
- 2 tablespoons cooked small diced potatoes
- 1 large egg
- 1 tablespoon mayonnaise
- salt and pepper, to taste
Instructions
- Spray an 8-ounce clear microwave-safe jar/container with nonstick cooking spray (or brush lightly with olive oil.)
- Place the ham, cheese, onion, bell pepper, potatoes, egg, and mayonnaise into the jar. Season with some salt and pepper, to taste. Mix very well so everything is coated in the egg.
- Place in the microwave and cook on high for 1 minute. Carefully remove the container and if you notice any uncooked egg, give it a stir and place back in the microwave and cook an additional 10-15 seconds or until cooked through. (Caution, it will be very hot!)
- Allow to cool slightly and enjoy.

How to Make Just Crack an Egg Step by Step

How to Prepare Ahead of Time
I like to keep some of this scramble mix ingredients prepped in the fridge. You can easily chop up the ingredients you’ll need ahead of time and keep them in separate airtight containers in the fridge for up to 5 days. Then just add them to the jar with the egg, broth, and seasonings each morning and breakfast is served. Great for meal prep!

I just made this recipe and this the best breakfast Iโve ever had (well except for eggs Benedict) It took a while to get it all chopped but your idea to divide into baggies for more meals is great. I think the mayonnaise is what took it over the top. I forgot to put oil in the jar so I poured everything into a bowl and added the egg and mixed it all there. I can visualize that happening again so Iโve decided to add that step from now on. Thank you for the great recipe.

How are you cooking the potatoes? Which type of potatoes are you using? I love these but want to maybe batch make and prep for variety of easy breakfasts!
You can use hash browns or tater tots (thawed), or cooked and cubed russet or golden – use whatever cooked potatoes you like!
