Ingredients
2tablespoonssmall diced cooked ham
2tablespoonsshredded sharp cheddar cheese
1tablespoonsmall diced onion
1tablespoonsmall diced green bell pepper
2tablespoonscooked small diced potatoes
1largeegg
1tablespoonmayonnaise
salt and pepperto taste
Instructions
Spray an 8-ounce clear microwave-safe jar/container with nonstick cooking spray (or brush lightly with olive oil.)
Place the ham, cheese, onion, bell pepper, potatoes, egg, and mayonnaise into the jar. Season with some salt and pepper, to taste. Mix very well so everything is coated in the egg.
Place in the microwave and cook on high for 1 minute. Carefully remove the container and if you notice any uncooked egg, give it a stir and place back in the microwave and cook an additional 10-15 seconds or until cooked through. (Caution, it will be very hot!)
Allow to cool slightly and enjoy.
Notes
Best jars to use. It is best to cook these in a clear jar/container. I use a clear glass microwave-safe jar so you can see the mixture, which helps you determine how much longer it needs to cook. If it is a light yellow color it is cooked, but if there are any darker yellow spots, that is uncooked egg and it needs to be microwaved for a few more seconds.Add 2 eggs. You can add two eggs if you want but make sure to use a 16-ounce jar instead. You'll also need to cook longer, to ensure the egg fully cooks.This recipe is so versatile.
