This Ham and Potato Casserole is easy, creamy, cheesy, and delish! Made with just 5 ingredients including frozen hash browns and ham, it’s a great way to use up any holiday leftovers. Or enjoy it anytime throughout the year as an easy side dish at dinner, or for brunch or lunch.
Cheesy Ham and Potato Casserole
This cheesy ham and potato casserole can be enjoyed year-round but it’s especially great to use up any leftover ham from the holidays. In fact, this dish makes an excellent “day after Christmas” brunch or lunch.
One thing I love about this dish is that while simple to prepare, it’s not lacking in flavor – especially if you’re using leftover honey glazed ham. It’s super versatile too. It makes a great side dish but also works well as a savory brunch dish (and a great egg-free alternative to quiche).

Ingredients Needed
Here’s a quick rundown of what you’ll need for this casserole.
(Don’t miss the recipe card below for details and measurements.)
- Hash brown potatoes – Using frozen, diced hash brown potatoes helps keep this casserole quick and easy. If you want to use regular potatoes, peel and dice them into 1/4″ inch pieces.
- Diced ham – Leftover glazed spiral ham is fantastic here but use whatever ham you have on hand or grab some at the store.
- Cheddar cheese – It wouldn’t be a cheesy ham and potato casserole without lots of cheese! I like to use regular cheddar but sharp white cheddar, gruyere, and smoked gouda would be tasty too.
- Cream of chicken soup – Undiluted, you do not need to add any liquid as directed on the can.
- Sour cream – Adds a slight tang to the cream sauce to balance out the richness and adds more creamy goodness.
- Pepper – I just add pepper, no salt, to this as I find there’s enough salt in there naturally.
- Chives – Optional garnish.
