Except the part where you can only make a few at a time. And then you have to keep them warm while you cook the rest of them…or the entire family eats separately.

Oh, but friends. I found the solution to those pancake problems we didn’t even know we had!
THIS.
One gigantic pancake that you just slice like a cake.
If there was ever a reason to own a rice cooker, other than how fantastic rice is, this is it.
I honestly may never make pancakes the traditional way again.
Epic. Seriously.
Giant Pancake (in your Rice Cooker!)
Serves 8
Prep time: 5 minutes
Cook time: 45 minutes
Ingredients
• 2 cups all purpose flour
• 1/4 cup granulated sugar
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1 teaspoon salt
• 2 eggs
• 1 1/2 cups milk
• 1/4 cup unsalted butter, melted
• maple syrup and/or fruit for serving
Directions
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together the eggs, milk, and butter. Whisk wet ingredients with the dry and mix until combined.
Coat your rice cooker bowl with nonstick cooking spray. Pour batter into bowl and set rice cooker menu to cook for 45 minutes.
Turn out onto a plate, slice and serve with syrup and fruit!
Notes: I did try this first with a premix – it cooked properly, but I found it more dense and with a weird aftertaste. I don’t think this would work in a slow cooker because it needs to steam, but if anyone wants to try it, I would recommend using no bigger than 4-quart round.

SO smart Amy!! My mom was always the official pancake flipper, and she’d eat hers standing in the kitchen while continuing to flip the rest of the batter. This would be the perfect solution!
Yep. That’s the one thing I hate about pancakes (and even waffles), is that everyone can’t eat together. I’ve made this 3 weekends in a row now. So in love!
Have you tried this in a slow cooker? I only have a really small rice cooker. I’m afraid it would burn if I tried it in my crock pot though.
Hi Lori – as I said in my notes, I have not tried this in a slow cooker and I don’t believe this would work in one because it need the steam to cook. But you could try it and see.
This idea is so brilliant! I really hope it works in my rice cooker as well. So far I’ve only ever made rice with it and it would be awesome if I could use if for other things as well! Thanks for sharing! ;)
This didn’t work in my rice cooker. My cooker turned on, but after about 5 minutes, turned to warm and wouldn’t go back. I have a very good rice cooker that allows me to keep rice on warm for days, so I don’t know what went wrong. I’m thinking the cheaper kinds just keep cooking the rice? I threw it in the oven and I’m crossing my fingers! Thanks for the idea!
Hi Lien – your rice cooker must have a timer and the ability to set it to cook for 45 minutes. If not, this won’t work. It can’t just cook for 5 minutes and then switch to warm.
Pancake making is my LEAST FAVORITE ACTIVITY EVER. At least with waffles, they are bigger and there’s a machine that does all the work for you. But pancakes are a hassle.
But not anymore. Time to add a rice cooker to my registry.

And I bet this would be great as a leftover re-heated in the microwave on a weekday morning!

If you put it in a microwave – set a glass of water in with it. Works like a charm with ANY kind of bread product – especially pizza and left over rolls!
I may just have to get a rice cooker! My grandchildren always want pancakes (and bacon) for breakfast when they spend the night. They want lemon juice and cinnamon, which would be no problem to add until it tasted right, but what do you think would happen if you add chocolate chips? I know when I make a cake in a crockpot, the chocolate chips just melt and are indistinguishable. I’m thinking that might happen with this, too? Maybe I could make this and let them use chocolate ganache for syrup. {smile}
I actually made a version with chocolate chips! They didn’t melt together, but they did all sink to the bottom. Maybe sprinkle them on top? I love the idea of adding cooked pieces of bacon throughout. YUM.
I wonder if coating the chips in flour first would help keep them from sinking, like one can do with nuts?

Okay first — I love this and it is beautiful and I want it for breakfast everyday. This blew my mind when I first saw it!! I can’t wait to try this out. So far I’ve only used my rice cooker to cook rice, which is sad as it can do so much more (but I do wear it out cooking rice…I’m always cooking rice :) ). I definitely need to try this next Saturday morning!

Do you use a special setting on the rice cooker?
No. My rice cooker has a bunch of different options (porridge, sushi, brown, quick, etc.) … I just used the “regular” menu and set it for 45 minutes.

Hm…I have a combo rice cooker/steamer. I think the method would work, but I would have a smaller pancake cake…definitely need to try this!
This would work in our Instant Pot on rice setting.
I don’t have a rice cooker or slow cooker. Do you think it might work using a covered fry pan on low heat on stove top or oven?
Hmm. I have no idea. A fry pan won’t be deep enough like a bowl, and I don’t know if it would let off enough steam. Try it and report back!
I always bake mine in the oven. Just use a regular pancake batter recipe and bake at 350 degrees for about 30 minutes. Works great!
OK. Next time I make pancakes, I’ll try the oven and let you know what happens.
