This is very different from my other chicken salad recipe but equally wonderful in its own way. In fact, if you love pickles, this is probably going to become your new favorite.

Chopped or shredded chicken is mixed together with a mayo-based dressing and diced dill pickles. Pickle juice is also added to the dressing, which is balanced out by the mayo to give the salad just the right amount of tangy pickle flavor.

Recipe Tips & Variations

Here are a few suggestions for preparing your dill pickle chicken salad.

  • Use canned chicken. If you’re trying to save time or money, you can replace the fresh cooked chicken with canned chicken. Keep in mind the texture and taste will be different.
  • Can I use pickle relish instead of diced pickles? For best results, I highly recommend buying whole pickles and chopping them. It really does have a different flavor and texture than the relish does. But in a pinch, you can use pickle relish.
  • Chill before serving. If you can, make your chicken salad far enough in advance that it can chill for at least an hour, to really give the flavors time to meld.

I typically eat this dill pickle chicken salad as a sandwich (it’s wonderful on a croissant), so I like serving it with potato chips, french fries, or onion rings.

You can also make it low carb by ditching the bread and serving as lettuce wraps instead. Or you can just eat it with a spoon!

  • 1 cup mayonnaise
  • 2 tablespoons fresh dill, , chopped
  • 1 scallion, , diced
  • 2 tablespoons pickle juice
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 3 cups cooked chicken, , shredded or chopped
  • 1 cup diced dill pickles
