Tips & Variations
- What’s the ideal baking sheet size? A 9×13 (1/4 sheet pan) is the perfect size in my opinion, which prevents the cornflake chocolate brittle from spreading and being too thin. But you can use a larger sheet pan if preferred, like a 10×15 jelly roll pan. Just be aware that the brittle will likely be thinner.
- Vary the chocolate or omit. I like semisweet or dark chocolate drizzled over the top to balance out the sweetness, but any chocolate will work! Try it with milk chocolate, white chocolate, or even peanut butter chips. You can also omit the chocolate drizzle entirely.
- Try it as an ice cream topping. This treat is great crushed up and sprinkled over ice cream!

How To Store Leftovers
- Countertop. Store cornflake crack brittle in an airtight container for up to 6 weeks in a cool, dark place, away from heat or moisture. Avoid storing it in the refrigerator, as it tends to weep and get soft.
- Freezer. Although not ideal, you can also freeze cornflake crack for up to 2 months. Let it cool completely before placing it in an airtight freezer-safe container and freezing. Let thaw at room temperature for an hour or so before serving, keeping in mind the overall texture will not be as crispy anymore.

Ingredients
- 3 cups cornflakes
- 4 tablespoons salted butter , room temperature
- 1/2 cup packed brown sugar
- 2 tablespoons light corn syrup
- 1 teaspoon vanilla
- 1/2 cup semisweet chocolate chips , for drizzle
- flakey seat salt
Instructions
- Preheat the oven to 300 degrees F. Line a 9×13 baking sheet with parchment paper and set aside.
- Pour 3 cups cornflakes into a large heat-safe bowl.
- In a medium saucepan over medium heat, add 4 tablespoons butter, 1/2 cup packed brown sugar, 2 tablespoons light corn syrup, and 1 teaspoon vanilla.
- Stir for 1-2 minutes until butter is melted, then bring to a gentle boil. Once boiling, reduce heat to low and continue cooking while stirring for another 1-2 minutes until the mixture is smooth and glossy.
- Remove caramel mixture from the heat and immediately pour over the cornflakes.
- Evenly toss to coat, then spread the mixture in an even layer (a 1/2 to 3/4-inch thick) onto the parchment-lined baking sheet.
- Bake for 20 to 30 minutes or until golden brown and caramelized (watch it closely to prevent burning.)
