This Citrus Artichoke Salsa is bright and fresh, perfect served with grilled chicken or steak during the summer!

A week ago, if you had said to me how well artichokes and oranges go together I would have looked at you with major skepticism. But last week I actually had them together…and the combo is amazing. It just works!
Thanks to my beloved peeps at Safeway, I had the wonderful opportunity to visit the Ocean Mist Farms, joined by Sun Pacific (Cuties Citrus), and Chandon.
I love artichokes. One of my fondest memories growing up actually revolves around them…and my sister. We lived together for a few years in college and once a week we used to buy some fresh artichokes. We’d sit at the coffee table and eat them with melted butter while we chatted about life. Good times.
Ocean Mist Farms is the leading grower of fresh artichokes in North America, with the only year-round growing program in the country. They talked to us about their harvesting process and even let us have a crack at it! Not only are they fun to eat, but I learned just how nutritious they are. A study for the US Department of Agriculture found that artichokes rank number one over all other vegetables when it comes to antioxidant levels. Who knew?! They’re also high in fiber, protein, prebiotics, and vitamins.
We were treated to an absolutely lovely brunch in the middle of the farm, with Chandon California, the first French-owned winery in California back in 1973, and also Sun Pacific, grower of mandarin orange Cuties, which have become the most popular snack due to their sweetness, nutritional value, and ease of peeling.
The weather was perfect and the meal was exceptional!
We were sent home with a goodie bag full of artichokes, Cuties, and Chandon sparkling wine, along with a challenge to come up with a recipe incorporating all three.
You guys. You must make this recipe. Seriously. The salsa is fresh and bright, combined with a tangy dressing. It pairs perfectly with grilled chicken and basically the best summer meal enjoyed outside on your patio with friends.

Citrus-Artichoke Salsa
Ingredients
For The Dressing
- 1/2 cup sparkling wine
- 1 teaspoon orange zest, (from one mandarin Cutie)
- 3 tablespoons orange juice, (from 3 mandarin Cuties)
- 2 tablespoons lemon juice
- 1 tablespoon vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/3 cup extra-virgin olive oil
For The Salsa
- 4 artichoke hearts, cooked, diced (1 cup)
- 2 mandarin Cuties, peeled, segments cut into thirds
- 1/3 cup diced red onion
Serve with grilled chicken or steak
Instructions
- In a small saucepan, bring sparkling wine and orange zest to a boil; simmer for 2 minutes until liquid is reduced by 1/2 (1/4 cup.) Let cool slightly. Transfer to a jar with a lid.
- Add in all the other ingredients for the dressing. Fasten lid and shake vigorously for a minute or so to combine and emulsify.
- In a medium bowl, toss dressing with the cuties, red onion, and artichokes.
- Serve with grilled chicken and enjoy!

Your afternoon at Ocean Mist Farms looks and sounds wonderful. I had no idea artichokes were so good for us. I’ll never forget the first time I saw someone eating one, which inspired me to try it myself. The process of getting to the ‘heart of the matter’, so to speak, was an adventure in itself. After preparing and cooking, the tiny bit of artichoke on the outer leaves was a bit disappointing. Then, I finally got down to the fuzzy part that covers the heart. After removing that section, I finally found the artichoke heart. I think the texture and taste of artichoke is an acquired taste, but your recipe sounds quite good. I’ll try it. That will make it the second time I prepare and cook artichoke.
