These chopped cheeseburgers are sort of like if sloppy Joes and a McDonald’s Big Mac got married. Some people say they’re similar to a Maid Rite loose meat sandwich (which originated in an Iowa restaurant back in 1926.) They’re truly the best of both worlds, easy to make, incredibly yummy, and so much more than ordinary. Call them a chopped cheeseburger, a loose meat sandwich, or a Maid Rite. We just call them absolutely delicious!

Helpful Tips & Variations

  • Buns. I typically make these with dinner rolls or slider buns. Avoid flavored buns or pretzel buns.
  • Condiments. Mayonnaise mixed with sriracha on the top buns and ketchup spread on the bottom is the best. The sriracha hot sauce does not make these spicy, but just adds a little heat and depth of flavor. You can replace with the ketchup with BBQ sauce for a different flavor. You could also include some mustard.
  • Add different flavor to the ground beef. I just brown the beef and add onions and pickle relish, then season with salt and pepper. But I’ve heard of people making a made rite with Worcestershire sauce, brown sugar, and beer mixed into the meat.
  • Cheese. I always use Kraft Singles American cheese. Yep, the fake cheese! Trust me, these just aren’t as good with freshly shredded cheddar cheese. But you do you.

These Chopped Cheeseburgers are a cross between a sloppy joe and a McDonald’s Big Mac. They’re super quick and easy, delicious, and quite awesome!

Ingredients 

  • 12 small brioche slider rolls, split (or similar)
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small sweet onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon coarse salt
  • 1/4 teaspoon black pepper
  • 1/3 cup dill pickle relish
  • 1/4 cup ketchup
  • 6 slices American cheese singles
  • 1/4 cup mayonnaise
  • 1 teaspoon Sriracha hot sauce

Instructions 

  • Preheat oven to 400 degrees F.
  • In a large nonstick skillet, heat the olive oil over medium-high. Add in the ground beef and onion; cook, breaking up the meat into tiny crumbles, until onions are translucent and the beef is no longer pink, about 5 minutes. Add in the garlic and sauté until fragrant, 20 seconds. Drain off fat.
  • Season the beef and onions with the salt and pepper and stir in the dill pickle relish. Set aside.
  • Place the bottoms of the rolls in a 9×13 pan, reserving the tops. Spread an even amount of ketchup onto each roll bottom.
  • Top with the cooked ground beef, followed by the cheese slices.
  • In a small bowl whisk together the mayonnaise and Sriracha hot sauce. Spread the mixture on the dinner roll tops and place on top of the cheese.
  • Place in the oven and bake until the bread is toasted and the cheese is melted, 5-10 minutes. Serve right away and enjoy!

How to Make Chopped Cheeseburgers Step by Step

  • Make the meat mixture. Brown 1 pound lean ground beef and 1 small sweet diced onion together in a tablespoon of olive oil until no pink remains and you end up with tiny crumbles, then drain off the fat. Season with 1 teaspoon coarse salt and 1/4 teaspoon pepper. Stir in 1/3 cup dill pickle relish.

  • Coat the bottom buns. Coat the bottom bun halves with a 1/4 cup ketchup.

  • Coat the top buns. Mix together 1/4 cup mayonnaise and 1 teaspoon Sriracha hot sauce, then coat the cut side of the top bun halves with it.

  • Form the sliders. Place the bottom of the rolls in a 9×13 pan, pile the meat mixture on top, followed by 6 slices American cheese singles, and finishing with the bun tops.

  • Bake. Bake uncovered at 400 degrees for several minutes until the bread is toasted and cheese is melted. Serve and enjoy!

Serving Suggestions

These chopped cheeseburgers are a fantastic appetizer for game day. They also make an easy dinner served with french fries, air fryer onion rings, or fried pickles! Tack on a simple side salad for a complete meal.

Storing Leftovers

These sliders are best enjoyed hot and fresh, but you can store leftovers for a bit in an airtight container or wrapped tightly in foil in the fridge for up to 2 days. I recommend reheating the sliders in the oven to crisp the bun up as much as possible. Reheating in the microwave is going to lead to a soggier bun.

My husband and I were both too tired to cook, but I had these bookmarked so I mustered up the energy to make these and they’re phenomenal!

I made half as made in the recipe for me, and the other half with no ketchup and thinly sliced cheddar for my husband. I also subbed homemade BBQ sauce for sriracha. Fantastic recipe that came in clutch! Another home run, A!!

Made these the other night an WOW. My husband said it almost tastes like a McDonalds Cheeseburger. We’re going to omit the spicy mayo next time, add mustard and some sliced pickles to see if we can recreate.
