In a large nonstick skillet, heat the olive oil over medium-high. Add in the ground beef and onion; cook, breaking up the meat into tiny crumbles, until onions are translucent and the beef is no longer pink, about 5 minutes. Add in the garlic and sauté until fragrant, 20 seconds. Drain off fat.
Season the beef and onions with the salt and pepper and stir in the dill pickle relish. Set aside.
Place the bottoms of the rolls in a 9x13 pan, reserving the tops. Spread an even amount of ketchup onto each roll bottom.
Top with the cooked ground beef, followed by the cheese slices.
In a small bowl whisk together the mayonnaise and Sriracha hot sauce. Spread the mixture on the dinner roll tops and place on top of the cheese.
Place in the oven and bake until the bread is toasted and the cheese is melted, 5-10 minutes. Serve right away and enjoy!
