Happy New Year! This is my last round-up for awhile, I promise. But HELLO. Anyone else in need of a serious sugar detox? It takes a lot…A LOT…for me to not want sweets, I love them so. But I’m craving a big ‘ol bowl of fruit right now. Or some raw broccoli.
Sure, in another couple of weeks days, I’ll be baking again, but for now I’m putting my running shoes back on and making some of my favorite healthier recipes. Join me!
Pasta with Avocado Cream Sauce – so flavorful, filling, and satisfying…and a creamy sauce without the cream. Score! Definitely a dish for avocado lovers. And for those who aren’t, this might change your mind.
Barbecue Hummus – I love homemade hummus and it’s so easy to change up the flavors. Here, I added BBQ sauce and it’s awesome. Perfect healthy snack, loaded with fiber and protein, to have in the fridge when 3pm rolls around and you’re *this* close to grabbing the Oreos.
Chicken Patties with Mint Yogurt Sauce – I had ho-hum expectations the first time I made these, but they really surprised me and have become a regular in my house. They’re super easy, light, healthy, and delicious. Even a winner with the kids.
Almond Butter Banana Bread – my friend, Melissa, sent this recipe to me and I am forever indebted to her. I make it at least twice a month. I like to have it on hand for those mornings I’m racing to get the kids to school and they need to eat breakfast in the car. (So basically, I should make it every week.)
Heirloom Tomato Beet Salad – juicy tomatoes paired with tangy marinated beets and salty feta. I ate this salad every day for weeks when heirlooms were in abundance at my market. And I spotted more just the other day, so GO. GO NOW! You must make this!
Cranberry Almond Granola Bars – these are only slightly sweet and a healthier granola bar. Awesome warm, right from the oven. I try to refrain from eating more than one two three at a time.
Banana Breakfast Smoothie – made with banana, yogurt, cocoa, and coffee grounds, this is a great energy boost in the morning to start your day.
Garden Mini Bagel with Scallion Cream – slightly sweet from the tomatoes, a hint of salty from the lox, and a buttery texture from the avocado and cream cheese. Mmmm. I love the flavor combo here. I eat this almost every day for a mid-morning snack. And isn’t it beautiful?
Broiled Avocado with Cayenne, Lime, and Parmesan – and if I’m not making that ^^^, I’m making this little number. Similar because of the bagel and avocado, but completely different in flavor. This one is tangy with a slight kick. And warm. Absolutely delicious.
Cumin-Lime Chickpea Salad – I make this salad every week. There’s no cooking involved, it comes together in 15 minutes, it costs under $5.00, it’s healthier than all get out, and packed full of awesome flavor. Love love love!
Bring it on 2013! I’m ready for ya!
Love the roundup! Chickpeas sound REALLY good to me right now…must cleanse from the booze and sugar overload of late :)
No doubt. I feel like I’ve been on sugar overload since Halloween.
Do you hear it? That bagel is screaming my name! {smile}
Hoping that the new year brings you many delightful surprises and much love and joy and laughter and almost too many hugs and smiles!
Happy New Year, Amy!
?
Much happiness to you in this new year and all year long too, Dani! <3
This girl is DEFINITELY ready for some healthy fare as well! Loving these recipe ideas!
P.S. Happy New Year to everyone.
I seem to have missed many of these recipes and don’t know how that happened. Can’t wait to make both mini-bagel “snacks,” and that Almond Butter Banana Bread definitely will be sitting on my table. The Humus also sounds like a nice variation.
Mom, you would love most (if not all) of these. And the beautiful thing is that you can easily make them for just you and not hear complaints from the peanut gallery ;-)
