Let me introduce you to one of our favorite dinners – this Rice and Beans recipe with added kielbasa. It’s a delicious twist on red beans and rice, loaded with protein, and crazy delicious. I mean…rice, beans, and smoked sausage! You just can’t go wrong with this combination. All my favorite things in one skillet. And so so easy!

- Dry long grain white rice – All of the wonderful flavors of this dish are absorbed into the white rice as it cooks to make each bite so tasty. (Avoid Instant rice, which will result in mushy grains from cooking too long.)
- Canned pinto beans – We love pinto beans. They have a subtle nutty flavor and creamy texture.
- Kielbasa – This precooked sausage adds so much flavor. Dice it up really small, so you get some in every bite.
- Onion and garlic – Provides excellent aromatics and flavor.
- Chicken broth – Use low sodium so the dish isn’t overly salty.
- Olive oil and butter – Both of these are used to sauté the kielbasa and rice.
- Seasonings – Dried Italian seasoning, cracked red pepper flakes, salt, pepper, and fresh parsley.
Recipe Variations
- Spice it up! If you like your food with heat, swap out the kielbasa for andouille sausage and/or add in some jalapeno peppers when you sauté the onion and garlic.
- Use a different bean. We love pinto beans in this dish, but you can absolutely use black beans, kidney beans, or white beans.
- Try brown rice. We have not tested this recipe with brown rice, but many of our readers have with good results. Keep in mind brown rice typically takes longer to cook and will need more liquid.

- Heat the oil and butter in a large skillet. Add the kielbasa and onion; sauté until onions become soft and translucent, stirring occasionally. Add in the garlic and stir for about 20 seconds.
- Stir in the rice, chicken broth, beans, and seasonings. Bring to a boil. Cover, reduce heat to medium-low, and simmer until rice is done, stirring once toward the end to prevent sticking.

What goes with beans and rice? With rice, beans, and kielbasa, this is a hearty one pot dish that is loaded with protein. For a more complete meal, we love to serve it with a slice of homemade cornbread or cheese bread. A simple, light side salad or cucumber salad is also nice to balance out the smoky sausage.
Storing Leftovers
- To store: Allow to cool completely, then store leftovers in an airtight container in the fridge for up to 4 days. This dish heats up really well in the microwave.
- Can you freeze rice and beans? Yep. Store in an airtight, freezer safe container for up to 3 months. Thaw in the fridge overnight before reheating.

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 tablespoon unsalted butter
- 14 ounce package polska kielbasa , diced
- 1 medium sweet onion , diced
- 3 cloves garlic , minced
- 1 cup dry long grained white rice
- 2 cups low sodium chicken broth
- 14 ounce can pinto beans ,rinsed and drained
- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon cracked red pepper flakes
- salt and pepper , to taste
- 1/4 cup finely chopped fresh parsley
Instructions
- In a large nonstick skillet, heat the oil and butter over medium-high. Add the kielbasa and onion; sauté until onions become soft and translucent (about 3 minutes), stirring occasionally. Add in the garlic and cook until fragrant, about 20 seconds.
- Stir in the rice, chicken broth, beans, Italian seasoning, cracked red pepper, and a dash of salt and pepper. Bring to a boil. Cover, reduce heat to medium-low, and simmer for 20 minutes or until rice is done, stirring once toward the end to prevent sticking.

We really enjoyed this! I double the rice, stock, and kielbasa because I’m incapable of reading correctly. I also used onion juice because my family doesn’t like onions. Instead, I diced up celery and sweet peppers and sautéed them with the kielbasa. I used dairy free butter with the olive oil. I sprinkled everything with Tony Cachere’s Cajun seasoning when I added the Italian seasoning and salt and pepper. It was delicious! Definitely adding to our rotations. For reference: my 12-yo ate it without compliant. They 9-yo is more fussy and didn’t like everything mixed together.

Yummy! I added a green and red bell pepper when I cooked up the onions and sausage. And I tripled the amount of Italian seasoning. And I’m quite pleased with how easy this turned out. I stirred it after about 18 minutes of simmering and the liquid was gone. The rice was actually starting to stick/brown to the bottom, which I kind of loved. Great recipe! I made it exactly as you did 3 times. Yesterday I made it again, left out the crushed pepper and added some salsa – as my husband has purchase way too much from Costco. It added a really nice touch of acid that left NO leftovers at all! Great recipe thank you so much! It will be added to the rotation permanently.

I make this recipe pretty much every week – we all love it. The only problem I have is that my rice never gets done. I’ve tried adding more broth and cooking longer and also various temperatures. Any advice?
Hm, not sure! Could be the size of your pan and the liquid isn’t able to circulate enough? I’ve never had this problem. Glad you love it, though!
Did you use Long grain rice? I have added extra rice after it started to boil and it was a big mistake.left a bunch of uncooked pieces.
I had this problem too until I switched to a pot (deeper than a pan) and then I added liquid (water or broth) at 10 minutes, 15 minutes, and then again at the end at the 20 minutes (or as needed). I just eyeballed how much I put in.

This recipe was delish! I made it in my instapot. Sauted the onions, garlic and kielbasa. I added red pepper as well. Then I added 1 cup of brown rice and 1 1/4 cup of chicken broth with the seasonings and set my instapot to 24 min. Let it naturally release for 10 min and it worked perfectly. After trying (and really liking) this recipe using kielbasa, I made it with ground beef. (My son doesn’t like kielbasa). The beef was a huge hit. I have made it a few times since. The last time, I “tweaked” this recipe using ground beef, black beans and taco seasoning. The guys like to wrap it in a tortilla and add cheese.
The next time I have leftover rotisserie chicken, I am going to try it again using white beans and cumin.
This recipe is quick and clean up is easy. The possible combinations are endless.

I’ve made this using Italian sausage and adding spinach and it’s delicious. Today I’m going to try it in the crock pot. Just putting everything in and hoping for the best. I anticipate I’ll have to add more broth as the rice cooks and absorbs it.
OK don’t do what I did. Used almost twice the liquid and the rice cooked inconsistently, some was cooked, some uncooked, some mush. It still tasted great but I was more bothered by the crunchy rice. If I was to do this again in the crock pot I would use instant rice in the last few minutes of cooking.

Loved this! Added a chopped bell pepper. Didn’t have pinto beans so used kidney beans. I think this is a dish you can add to, or take away from, very easy and very yummy. Will make this again and again. Big hit with the family.

I love this recipe and make it often- I am going to be serving this for 14 people-I was thinking of tripling the entire recipe.
I added 1 can of diced Italian tomatoes. It was great and gave it an extra taste. YUMMY
I used a can of small red beans, added 1/2 cup of diced mixed peppers (red, green and orange) and increased the rice and broth by 50%. Used ground cayenne to taste rather than the crushed red pepper. Huge success!
Turned out Great! I browned the kielbasa before onion like others had suggested. I did need to add an additional 1/2 cup of broth to soften rice. Family loved it!
This was just what I was looking for my quick Kielbasa dinner tonight. I started with the Kielbasa on high for a bit just to get a little brown going on it before adding the onions . I used Jasmine rice which made it creamy. I also cooked up a cup of frozen carrots & peas & stirred them in at the end along with some sesame seeds. My hubby loved it , it’s a keeper . Also I believe I’ll adjust for more rice next time for the ratio to meat. I’m thinking it also needs a little crunch, maybe edamame or pine nuts . Good job !!

Hi Shandy – unfortunately, no. It will result in mushy grains from cooking too long.
I just used instant. About a 1 1\4 cups. I booked everything first for about 5 minutes or so and then added the instant rice for about another 7 minutes. Turned out great!
I also only have instant. Did you cook the rice first? Then add it to your sausage mixture? Did you alter the chicken broth ratio?
Tried last night – a hit with every family member, no leftovers!
The only sub I made was using Great Northern white beans instead of pinto, only because I didn’t have any whole pintos that weren’t dry. I also added less red pepper flakes. Waited until the end to add salt (mine needed none.)

Hi Kelly – doubling the recipe would be enough for 8 people, but the only way to truly double it would be to make two separate skillet batches. We love it with some cornbread or cucumber salad.

Made this last night since these are normal ingredients I have on hand in my kitchen. Family really enjoyed it! All the leftovers where finished today which is not normal in my house. Only thing I will change is add a pinch less of red pepper flakes. Mine was a tad to spicy. But we did enjoy it and it will become a regular in my house. Easy quick go to meal!

Okay, I think this is one of the best recipes I’ve come across in a while. I made this it with the following modifications, due to what I had on hand. When I cooked the onions, garlic, and kielbasa I added the dry rice and let it get golden. Instead of pintos I used cannellini beans. I also added a can of petite diced drained tomatoes. I know it is unfair to offer feedback when you have adapted the recipe, but boy, oh boy was it delicious.
I subbed cumin for Italian seasoning and added a can of chopped tomatoes and some frozen corn…topped with cilantro and lime wedges….nice twist and thank you for the one pot meal! Big hit!!

I have to say I was skeptical of all the rave reviews. I’ve made many a recipe based on them and then thought, what were they thinking! ? I followed the recipe to a T, assuming the family would eat it with their noses turned up. (I like to make them my guinea pigs from time to time). Hi Diane – subbing in black beans is purely a personal preference. And since brown rice usually takes longer to cook, you’d need to adjust somehow for that. Try it!
I cooked this tonight but doubled it. My rice was still “crunchy”. What could I have done wrong?

Maybe your pan was too small, which wouldn’t allow the liquid to circulate enough? I have made this countless times, as have so many others without any issues. Sorry!

I had 2 6 oz. packages of Southwest chicken strips that I needed to use up. I used them instead of the kielbasa. I also subbed in some cilantro instead of parsley. YUMMM!!!

Hi Bri! – these recipes are meant to serve 4, but if you cut back slightly per person OR if your family doesn’t typically eat a lot to begin with, then these meals could provide enough left overs for 2 people for lunch the next day.

I’m probably in the minority but I hate beans. Do you think substituting mushrooms would work? Maybe even sub half a cup of the stock with some white wine? Thoughts?
