Easy Pimento Cheese Egg Salad

Inspired by my beloved egg salad and pimento cheese dip, this is a great combination of two southern favorites. It’s creamy, hearty, and so flavorful that you can’t go wrong serving it for lunch or dinner.

This pimento cheese egg salad has quickly become a family favorite and I find myself making it quite frequently in the summer. I usually keep some hard boiled eggs in the fridge so this is perfect for those hot days when I just don’t want to cook.

  • Super creamy texture. Homemade pimento cheese mixed with extra mayo offers that traditional creamy egg salad experience.
  • Just the right amount of heat. Ingredients like jalapenos and hot sauce add a kick to this egg salad but the mayo, cheddar, and cream cheese keep it from being too spicy. (Unless you want it to be!)
  • Quick and Easy. Unlike some egg salad recipes, I don’t find that this one needs to be prepared in advance. You can easily whip it up and enjoy immediately, as long as you have cooled hard boiled eggs.

What You’ll Need

This egg salad with pimento cheese is made with many of the same ingredients as classic egg salad, with a few additions.

  • Sharp cheddar cheese – If you can shred it yourself from the block, that’s the best option.
  • Cream cheese – Softened to room temperature for easy mixing.
  • Mayonnaise – Adds the rich, creamy base.
  • Pimentos – Diced and well-drained.
  • Scallions – Thinly sliced. I prefer scallions over white onion here for the softer flavor.
  • Jalapeno – Minced, adds a bit of heat.
  • Dijon mustard – Adds some tanginess to the salad, which is balanced nicely by the other flavors.
  • Hot sauce – Add extra for a spicier dressing.
  • Spices – Salt, pepper, and garlic powder season the dish.
  • Hard-boiled eggs – I make my own hard boiled eggs, but store-bought are perfectly fine. If you make them, be sure they are completely cooled, even cold if possible and peeled before making this recipe.

How To Make Pimento Cheese Egg Salad

As long as you have cooled hard boiled eggs ready to go, this salad comes together in just a few minutes! (Scroll down to the recipe card below for details and precise measurements.)

  1. Combine the ingredients. Add all ingredients except for the eggs in a bowl. Whip with an electric mixer to combine.
  2. Add the egg. Gently fold in the chopped eggs. Taste and adjust the seasoning as needed.
  3. Enjoy. Serve right away or cover and chill until serving.

Tips & Variations

  • Make it spicy. If you like your food extra spicy, double the jalapeno, add extra hot sauce, or a pinch of cayenne or chipotle powder to amp up the heat.
  • Prepare the eggs in advance. Check out all of my tips for making the best hard boiled eggs, but the most important thing for this salad is to boil the eggs well in advance. They should be cool or even chilled when adding them to the salad.
  • Enjoy immediately. For the creamiest texture, serve this pimento egg salad right away. No need to chill it first.

Serving Suggestions

This egg salad with pimento cheese makes an easy snack, lunch, or dinner. For a lighter meal, you can enjoy it on lettuce wraps. You can also add it to your favorite bread to make a classic egg salad sandwich. For parties, I like to use it to make finger sandwiches.

Storage & Make Ahead

  • Make ahead. I think it is best served right away for ultimate creaminess. However, you can make this ahead and after chilling, let it sit out at room temperature for about 15 minutes.
  • Proper storage. Store any leftovers in an airtight container in the fridge for up to 3 days. I do not suggest freezing.

Ingredients 

  • 4 ounces shredded sharp cheddar cheese
  • 4 ounces cream cheese, , softened
  • 1 cup mayonnaise
  • 2 tablespoons diced pimentos, , well-drained
  • 2 scallions, , thinly sliced
  • 1 tablespoon minced fresh jalapeno
  • 1 tablespoon dijon mustard
  • 1 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • 1/4 teaspoon black pepper
  • 12 hard-boiled eggs, , peeled and roughly chopped

Instructions 

  • Add the cheddar, cream cheese, mayonnaise, pimentos, scallions, jalapeno, dijon, hot sauce, garlic powder, salt, and pepper to a large bowl.
  • With an electric hand mixer, whip until well combined.
  • Using a spatula, gently fold in the chopped eggs.
  • Taste and adjust seasoning as needed. Serve immediately or chill until serving.
