Easy Macadamia Butterscotch Pie Recipe
If you love cookies and the flavor of butterscotch, you’ll love this pie. Loaded with white chocolate and macadamia nuts, the batter is poured into a pie shell and has that great sweet and salty combo that you just can’t beat.
The butterscotch and white chocolate chips don’t really break down that much, but the gooey filling surrounding them does, giving this pie great texture, too.
Serve it with a caramel sauce or a scoop of vanilla ice cream and it’s pure nirvana!

- Unsalted butter – For richness and necessary moisture, melted and cooled.
- Eggs – To bind the batter together.
- Vanilla – For flavor.
- Granulated sugar – For sweetness.
- All-purpose flour – Spooned and leveled, not scooped,for accurate measuring.
- Macadamia nuts – Finely chopped.
- Butterscotch chips – Our star flavor!
- White chocolate chips – For sweetness and contrasting flavor.
- Pie crust – 1 9-inch pie crust, store bought, or homemade (par-baked)
Recipe Variations
- Switch up the chocolate chips. If butterscotch and white chocolate aren’t your thing, you can easily use milk, semisweet, dark, or a combination!
- Change the nuts. This recipe calls for macadamia nuts, but swap them out for walnuts or pecans, if you prefer.
- Make it boozy. Add in a splash of rum or Kentucky Bourbon!
How to Macadamia Butterscotch Cookie Pie
This is as easy as it gets! All you do is mix all of the ingredients together until combined, pour into the pie shell and bake. That’s it!

Serving and Proper Storage
- Serving suggestions. For easier slicing ability, let it set for a couple of hours out of the oven, but when it’s still warm. (If you can’t wait that long, I completely understand.) Serving with a drizzle of caramel sauce and/or vanilla ice cream is completely optional, but oh so good!
- Storing leftovers. Once baked, this pie can sit out for a day (covered tightly with foil.) After that, it should be refrigerated and will keep up to 3 days.
- Freeze. Allow to cool completely, then wrap pie tightly with plastic wrap and also aluminum foil. It can be frozen up to 2 months. Thaw overnight in the fridge.

Macadamia Butterscotch Pie
Ingredients
- 1/2 cup unsalted butter ,melted and cooled
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup finely chopped macadamia nuts
- 1/3 cup butterscotch chips
- 1/3 cup white chocolate chips
- 1 9-inch pie shell , store bought, or homemade (par-baked)
Instructions
- Preheat oven to 350 degrees F.
- In a medium bowl, mix together all ingredients; pour into the pie shell.
- Place on a cookie sheet and bake for 45 minutes.
- Remove from the oven and allow to sit for about 10 minutes. It will still be nice and gooey. (If you prefer a firmer texture, let set for a couple of hours before slicing.)
- Serve on its own or drizzle with melted butterscotch or caramel.
